Deep and remarkably dense, this cuvée reveals intense ruby highlights, a testament to the wine's beautiful concentration.
Nose
Wonderfully complex, the bouquet unveils delicate aromas of violet and lightly candied red fruit, enhanced by an elegant smoky note typical of its terroir.
Palate
The attack is broad, coating the palate with an evident yet perfectly controlled concentration. The ripe, fleshy tannins support a silky texture in which flavours of red fruit, peony and violet come through. The finish is delicate, shimmering and remarkably persistent.
Food and Wine Pairing
Thanks to its subtle balance of structure and elegance, this wine pairs beautifully with refined poultry dishes such as duck with cherries or chicken in sauce. It will also complement feathered game, herb-crusted lamb, and dishes featuring wild mushrooms or black truffles. On the cheese side, an Époisses or a mature goat cheese would make a perfect match.

The Finesse and Complexity of an Iconic Premier Cru from Volnay
The Estate
Founded in 1731, the Bouchard Père & Fils house is a true institution in Burgundy. Based in Beaune, it oversees a remarkable vineyard, the vast majority of which is classified as Premier Cru and Grand Cru. Since 2022, the estate has been under the wing of Artémis Domaines. This transition marks a strategic turning point, with the end of the négociant business in order to focus exclusively on producing wines from their own vines, in the utmost respect of this historic terroir.
The Vineyard
Acquired in 1775, the climat of Caillerets represents the estate's very first land purchase in Volnay. East-facing, at an altitude of between 250 and 275 metres, this plot benefits from a thin clay-limestone terroir dotted with small stones known as "chailles". This vineyard is divided into two complementary geological zones, providing both limestone tension and clay richness.
The Vintage
The year 2022 began with an early spring, marked by a few frost episodes. The season then continued with a particularly hot and sunny summer, offering ideal conditions for excellent berry ripening. Thanks to its thin soils, the plot enjoyed optimal, early ripeness, allowing the harvest to take place before the autumn rains.
Winemaking and Aging
The grapes for this Volnay 1er Cru "Caillerets - Ancienne Cuvée Carnot" Domaine 2022 are harvested by hand into small crates, followed by careful sorting. The winemaking incorporates 20 to 30% whole clusters. After a cold maceration, fermentation is accompanied by punching down. The wine is then aged for 16 to 20 months in French oak barrels, 35 to 40% of which are new, before manual racking for the final blend.
