Declared as vintage for the first time (although it has always been based on a single vintage), the 2007 Brut Rosé Cuvée Paradis is the same wine as the white Paradis but with 8% red wine added. The color is a luminous pink with some orange reflections, and the bouquet is fresher and purer than the richer white 2009 Brut Cuvée Paradis. On the palate, this is an intense and complex yet pure and refreshing pink Cuvée Paradis that is still very fresh and vibrant, with lots of energy and tension. This is highly delicate and complex at the same time, and I would cellar it for a couple of years to benefit from more vinosity. Tasted April 2018.

The 2007 Champagne Cuvée Paradis Brut Rosé is a more layered and complex expression that pours a pale pink hue. It unfolds with laminated pastry, buttered apple, and quince and is long on the palate, with a rounded mousse and energetic driving citrus and mineral tension. It has focus along with balanced salinity, notes of orchard fruit with ripe apricot, and a lasting floral finish. Drink over the next 15-20 years.

A great rosé, slender and pure, with a beautiful, refined and very persistent length.

Paradis Rosé 2007 stands out as a fine food wine. It calls for the juiciness of pigeon or the maritime aromas of lobster.

The partner to the impressive Paradis Brut, this is equally fine. It is tight and structured, likely therefore to age in the bottle. The red fruits, swathes of acidity, hints of toast and creamy texture hold together in a complete, powerful wine that will be better from 2019.
