Tasting notes
Color
The color reveals a deep ruby red hue, enhanced by delicate purplish highlights.
Nose
The nose expresses a beautiful aromatic complexity, dominated by black fruit aromas such as blackcurrant, blackberry and black cherry, enhanced by notes of fresh red fruits. It then opens onto floral touches of violet and peony, before revealing a very distinctive minerality evoking graphite, pencil lead and slate, complemented by subtle nuances of licorice.
Palate
The attack is fresh and vibrant. The palate seduces with its silky, elegant texture, supported by ripe, fine yet structuring tannins. Here we find the brightness of the fruit and the mineral precision perceived on the nose, all perfectly balanced by a beautiful acidity that stretches the wine towards a remarkably long finish.
Food and wine pairing
This red wine pairs wonderfully with grilled or roasted red meats, particularly beef cuts, as well as with game such as wild boar or duck. It will also elevate rich stewed dishes or roasted autumn vegetables, such as butternut squash and mushrooms.
Service and storage
To fully appreciate the Gondwana 2022, it is recommended to serve it at a temperature between 13 and 17°C, depending on whether you are seeking the brightness of the fruit in its youth or the complexity of its maturity. This wine, built for long-term aging, can be enjoyed starting in 2026 and will continue to improve until around 2040.

This wine presents a perfectly dry profile with a residual sugar level of 0 g/L. Its total acidity is 3.28 g/L for a pH of 3.00, technical characteristics that give it remarkable stability and great freshness.
The pure and mineral expression of a Cabernet Franc from the Loire Valley
The estate
Created between the years 800 and 1000 by Benedictine monks, Château de Fosse-Sèche is located in France, in the Loire Valley. This historic estate notably saw the birth of Cabernet d'Anjou in 1905. Since 1998, the Pire family has led the estate. Today, brothers Guillaume and Adrien Pire manage the vineyard with a deeply ecological philosophy. Of the estate's 45 hectares, 30 are entirely dedicated to preserving biodiversity, illustrating their commitment to biodynamic viticulture in perfect harmony with nature.
The vineyard
Classified as Vin de France, the vineyard extends over the Brossay plateau, a true geological anomaly within the appellation. Unlike the surrounding limestone soils, the vines flourish on a Jurassic terroir composed of flint and iron oxide, completely devoid of free limestone. This configuration, combined with a convex exposure offering excellent ventilation, encourages deep rooting. Grown biodynamically without any synthetic chemical inputs, the vines produce very low yields. The harvest is carried out exclusively by hand to ensure a rigorous selection of berries at optimal ripeness.
Winemaking and aging
The estate's philosophy favors minimal intervention to preserve the authenticity of the terroir. For the Gondwana 2022, fermentation takes place using indigenous yeasts, followed by a short maceration of less than ten days. Aging then takes place over 12 to 14 months on total lees, without any racking. Notably, the estate rejects the use of wood: the wine rests exclusively in clay concrete egg-shaped tanks, a shape and material that promote natural micro-oxygenation while preserving the aromatic purity of the fruit.
