Tasting
Appearance
This French white wine reveals a beautifully clear appearance. Its pale yellow hue is illuminated by brilliant golden highlights.
Nose
Remarkably intense, the bouquet opens with herbaceous aromas of boxwood, rhubarb, and elderflower. With aeration, a lovely complexity emerges through fruity notes of lime and mirabelle plum, subtly complemented by hints of pear and licorice.
Palate
The attack is clean and direct, introducing a dense and full-bodied texture, perfectly supported by bright acidity. The crisp texture unfolds flavors of gooseberry intertwined with a mineral and saline dimension. The long-lasting finish concludes with delicate peppery notes.
Food and wine pairings
This great wine pairs beautifully with seafood such as crayfish or langoustines, as well as fish like salmon or pike. It also enhances white meats, frog legs, asparagus-based dishes, and aged goat cheeses such as Crottin de Chavignol.
Serving and cellaring
The Pouilly-Fumé "Haute Densité" 2023 offers an optimal tasting window from 2024 to around 2030. To fully appreciate its nuances, it is recommended to serve it at a temperature between 50 and 54°F.

The estate
The history of the Château de Tracy is among the oldest in France, with its origins dating back to 1396, as evidenced by the purchase of the "Champ de Crix". Located in the Loire region, this historic estate spans a vineyard of 32 to 36 hectares. Today, Juliette d'Assay leads the property, continuing a centuries-old family legacy. Under her direction, the estate stands out for its strong environmental approach, certified organic, and for innovative viticultural methods that enhance the expression of its terroirs.
The vineyard
The vines dedicated to this Pouilly-Fumé thrive on the limestone plateau of the "Champs de Crix", benefiting from an ideal south-west exposure. The soils are composed of clay with flint, Kimmeridgian marls with small fossilized oysters, and limestone. The uniqueness of these plots lies in their very high-density planting, reaching 17,000 vines per hectare. This method, combined with rigorous massal selection and biodynamic practices, drastically limits yields to deliver exceptional berry concentration.
The vintage
The 2023 vintage benefited from highly favorable weather conditions. A mild, rainy winter helped replenish soil water reserves, followed by a sunny spring and a warm summer, providing an ideal growing cycle and optimal grape ripening.
Winemaking and aging
After manual harvesting and meticulous sorting, the grapes undergo slow and gentle pressing. Fermentation of the Pouilly-Fumé "Haute Densité" 2023 takes place under controlled temperatures in concrete and stainless steel tanks. Aging then continues for 14 months, partly in fifteen-year-old oak barrels and a few new barrels, with regular bâtonnage to enrich the texture.
