Tasting
Appearance
The wine shows a pale yellow hue with luminous highlights, characteristic of a Chardonnay still in its youth.
Nose
The nose opens with floral notes, accompanied by yellow fruit and citrus, over a discreet background of hazelnut.
Palate
The palate is rich and concentrated, carried by a pronounced mineral backbone and a freshness that structures the whole through to a persistent citrus finish.
Food and Wine Pairings
This wine pairs beautifully with foie gras and fine fish (sea bream, sea bass, salmon or hake), as well as shellfish such as lobster or spiny lobster. It also works very well with white poultry in a creamy sauce and delicate vegetables such as asparagus.
Serving and Cellaring
The Chassagne-Montrachet Village "Les Houillères" 2023 is ideally served at 13°C. It can be enjoyed now, but will reveal its full complexity by continuing to evolve until around 2033.
A Chassagne-Montrachet Village from Old Vines at the Gateway to the Grands Crus
The Estate
Domaine Bader-Mimeur officially came into being in 1920, following the marriage of Charles Bader and Élise Mimeur, one year after the acquisition of the vines of the Château de Chassagne-Montrachet. Based in Burgundy, in the heart of this village, the estate is now run by Marie-Pierre Bader, Alain Fossier, Nathalie Bernard and Sébastien Fossier. Its vineyard extends over approximately 8 hectares, certified HVE Level 3, demonstrating a strong environmental commitment.
The Vineyard
The "Les Houillères" cuvée comes from old vines of around 60 years of age, planted in Chassagne-Montrachet, just 150 metres from the grands crus and very close to the border with Puligny-Montrachet. This plot lies on clay-limestone soil and is farmed using lutte raisonnée (sustainable pest management), without any herbicides, with partial grass cover that promotes soil biodiversity.
Vinification and Ageing
The grapes intended for the Chassagne-Montrachet Village "Les Houillères" 2023 are harvested by hand and transported in crates of 30 kg maximum before being gently pressed. After cold settling, the juice is transferred to barrel by gravity within 24 hours of pressing. Alcoholic fermentation takes place entirely in oak barrels, using indigenous yeasts, and the wine is then aged for around one year with regular lees stirring.
