A Burgundy Premier Cru combining power and elegance

The Estate

Domaine Chevillon traces its origins to the beginning of the twentieth century with Symphorien Chevillon. Robert Chevillon, who joined the family business in 1968, transformed the estate by developing estate bottling and expanding the vineyard from three to thirteen hectares. Since 2003, his sons Denis and Bertrand Chevillon have managed this family property in Nuits-Saint-Georges, representing the fifth generation. The estate is recognized as a benchmark of the appellation, producing structured and elegant wines that precisely express their terroirs. The thirteen hectares of vines are distributed across eight climats classified as Premier Cru.

The Vineyard

The Les Chaignots climat is located on the northern flank of Nuits-Saint-Georges, near the commune of Vosne-Romanée. The plots benefit from a south-east exposure on gentle slopes, at an altitude between 260 and 280 meters. The soils are composed of limestone, clay, and alluvial deposits from the Combe de la Serrée. Domaine Chevillon owns approximately 1.55 hectares in this climat, with vines averaging 60 years of age. This northern position gives the wines an elegance and fragrance reminiscent of the Vosne-Romanée style, while retaining the characteristic structure of Nuits-Saint-Georges.

The Vintage

The 2012 year in Burgundy began with a difficult spring and early summer, marked by cold and wet weather that delayed vine development. Hail episodes affected certain sectors in June and August. From mid-July, weather conditions improved considerably with hot, dry, and sunny weather that persisted until the harvest. This favorable period allowed for optimal ripening of the grapes despite reduced yields. The harvest began around September 17th under favorable conditions, producing concentrated and balanced wines.

Winemaking and Aging

The grapes for the Nuits-Saint-Georges 1er cru "Les Chaignots" 2012 are entirely destemmed before vinification. Cold maceration at approximately 10°C for five to six days precedes alcoholic fermentation. This takes place in temperature-controlled stainless steel tanks for two to three weeks, with daily punching down and pumping over. Aging lasts fifteen to eighteen months in French oak barrels, 30% of which are new wood. The barrels come from three different coopers. Bottling is done by gravity.
