The estate
Created in 1945 in Fuissé, in the heart of the Mâconnais, Domaine Cordier Père et Fils now spans approximately 30 hectares. Managed by Christophe Cordier since the transmission by his father Roger in 1971, this family estate cultivates an exceptional mosaic of over 120 plots spread across 9 villages. Committed to organic and biodynamic viticulture since 2018, the estate obtained AB and Demeter certifications in 2024. A perfectionist with high standards, Christophe Cordier aspires to create the greatest Mâconnais crus by working with pure respect for the fruit and a permanent quest for excellence.
The vineyard
The Saint-Véran Village "Terres Noires" 2020 comes from a climat located in the commune of Davayé, extending from the Roche de Vergisson. This terroir takes its name from the color of the humus-rich soil, while the subsoil is limestone with a distinctive presence of iron oxide. The vineyard benefits from a full south exposure on a gentle, well-ventilated slope, allowing for ample sunshine. The vines are managed according to biodynamic principles, with very short pruning, severe disbudding, and manual leaf thinning. Harvesting is done manually, plot by plot, with intentionally limited yields.
Winemaking and aging
The vinification of the Saint-Véran Village "Terres Noires" 2020 is carried out exclusively with indigenous yeasts to preserve the terroir's identity. Aging takes place on the original lees in the estate's air-conditioned gravity-fed cellars, allowing for high-precision work. French high forest oak with house toasting, large casks (foudres), and vats are used to achieve the desired balance and tension. Bottling is done gently by gravity, without fining and with very light filtration.
