Tasting
Colour
This white wine from France displays a bright, limpid hue, enhanced by delicate pale gold nuances.
Nose
Initially restrained, the bouquet gradually opens onto an intense floral dimension, releasing captivating scents of hawthorn, honeysuckle and mock orange.
Palate
The attack is bold, revealing the chalky finesse of the terroir. The palate unfolds a velvety texture in which the oak is harmoniously integrated, offering flavours of white-fleshed fruits such as green apple, peach and pear. A delicate saline, chalky thread accompanies a lively, tangy finish with impressive length.
Food and Wine Pairing
Thanks to its balance of liveliness and roundness, this wine pairs beautifully with creamy or buttery dishes, such as leek pie, a rich risotto or poultry in sauce. It also excels as an aperitif, or alongside seafood cooked on the plancha, gratinated oysters, sushi, and goat's cheese.
Service and Storage
To fully appreciate the Mâcon-Fuissé 2023, it is recommended to serve it between 10 and 11°C as an aperitif, and between 11 and 13°C with a meal, ideally in medium-sized Burgundy-style glasses. Simply letting it breathe in the glass is enough to release its aromas. Ready to enjoy now, it can be cellared until around 2028.
The Mineral Elegance and Richness of a Great Burgundy Wine
The Estate
Founded in 1945 in the heart of the village of Fuissé in Burgundy, Domaine Cordier Père et Fils is a true institution. Managed since 1987 by Christophe Cordier, the estate spans 31.5 hectares and stands out for its exceptionally rigorous approach. The winemaker has revolutionised the family's practices by drastically lowering yields and favouring environmentally friendly viticulture. Certified organic and biodynamic since 2024, the estate notably uses horse ploughing to preserve the life of its soils, raising its wines to the very top of the region.
The Vineyard
The Mâcon-Fuissé comes from an exceptional mosaic of plots enjoying a privileged south and south-east facing exposure. The old, deeply rooted vines flourish within a natural amphitheatre at altitudes of up to 350 metres. The soils display great geological diversity, combining limestone marl, crystalline rock and pink microgranite, giving the grapes a unique identity and a pronounced minerality.
The Vintage
The year 2023 enjoyed generally mild weather conditions in Burgundy. This favourable weather proved particularly beneficial to the vine's growth cycle, allowing the berries to reach ideal ripeness before harvest.
Winemaking and Aging
The making of the Mâcon-Fuissé 2023 begins with meticulous hand-picking. In temperature-controlled, gravity-fed cellars, fermentation starts naturally thanks to indigenous yeasts. The wine then undergoes extended ageing on its original lees, spread across French oak barrels and large casks with bespoke toasting. Bottling is carried out by gravity, without fining and with extremely light filtration, in order to preserve all the wine's substance and the authenticity of the cru.
