Description
Characteristics and Tasting Tips for the Mâcon-Azé 2025 from Domaine de la Garenne
Food and wine pairings
The Mâcon-Azé 2025 pairs beautifully with roast poultry or poultry served in a sauce, grilled fish, and seafood and shellfish, whose briny freshness it highlights. It is also an excellent companion to cheese, whether soft-ripened varieties such as Brie or Camembert, or pressed cheeses such as Comté.
Serving and cellaring
The Mâcon-Azé 2025 is best enjoyed served between 11 and 13 °C, a temperature that allows its freshness and aromas to show at their best.

The estate
Domaine de la Garenne was born in 2008, when the Beaumont family took over this vineyard on the heights of Azé, in the Burgundian Mâconnais, in partnership with the Devillard family, who themselves come from a long winemaking tradition in Mercurey. Today run by the Beaumont family, who own the property, the estate covers six hectares entirely devoted to Chardonnay and holds the Haute Valeur Environnementale certification. Internationally recognised, notably thanks to the distinction awarded to its Mâcon-Azé 2010 by Decanter magazine, the estate now exports its wines to more than twenty countries.
The vineyard
The vines that produce the Mâcon-Azé are among the highest in the village of Azé, in the Haut-Mâconnais. Planted in 1986 on a south-east-facing limestone terrace, they enjoy excellent sunshine. The soils, a blend of silica, clay and sand over a limestone base, favour balanced ripening of the Chardonnay. Vineyard management, certified Haute Valeur Environnementale, is based on hand harvesting combined with rigorous grape sorting.
Winemaking and ageing
After hand harvesting and careful sorting, the grapes destined for the Mâcon-Azé 2025 are whole-bunch pressed in a pneumatic press, then cold-settled overnight. Alcoholic fermentation takes place in stainless steel tanks at low temperature, followed by complete malolactic fermentation. The wine is then aged on fine lees in stainless steel tanks, without any use of oak, in order to preserve the freshness and purity of the fruit.
Grape variety
100% Chardonnay.
