A modern, structured Tavel rosé from the Rhône Valley

The estate

Founded in 1986 by Francis Delorme and his son Christophe, the Domaine de la Mordorée has established itself as a benchmark of the Tavel appellation in the southern Rhône Valley. The estate takes its poetic name from the woodcock, a bird admired by Francis Delorme, a passionate hunter. Since Christophe’s untimely passing in 2015, Madeleine Delorme and their daughter Ambre have carried on this legacy of excellence with determination. The vineyard covers around 60 hectares spread across several plots in 8 communes. Certified organic since 2013 and Demeter biodynamic since 2020, the estate ranks among the 155 best estates in the world according to Robert Parker.

The vineyard

The vines of La Dame Rousse Rosé 2025 grow on soils composed of rolled pebbles, fine sand, and limestone slabs, characteristic of the Tavel appellation. These pebbles store heat during the day and release it at night, promoting slow and complex ripening. Limestone gives structure to the wines and develops a characteristic minerality, while sandy soils enriched with clay bring depth and aromatic complexity. Located a few kilometers from Avignon, the vineyard enjoys panoramic views of Mont Ventoux and optimal sun exposure. The vines are cultivated using certified biodynamic farming, with exclusively manual harvests and soil work that respects biodiversity.

Winemaking and aging

The winemaking of La Dame Rousse Tavel Rosé 2025 favors a low-intervention approach, allowing the terroir to fully express itself. The estate uses native wild yeasts for fermentation, thus preserving the microbial specificity of the terroir. This method contributes to the uniqueness and authenticity of the final wine, avoiding the standardized aromatic profiles of commercial yeasts. The estate’s philosophy is based on the principle that nature is more gifted than man, thus limiting technological intervention to what is strictly necessary.
