This white wine pairs wonderfully with rich, substantial dishes. It will elevate poultry prepared with a rich sauce, veal in cream sauce, or a mushroom and truffle risotto. When it comes to cheese, favor soft, washed-rind varieties.

The mineral expression of a great white wine from the Côte de Beaune

The estate

Founded in 1999 by the Boisset family, the Domaine de la Vougeraie is located in Premeaux-Prissey, in the heart of Burgundy, France. Born from the union of several historic plots, the estate now spans around fifty hectares. A pioneer in the region, the property has practiced biodynamic farming since 2001, placing great importance on the lunar calendar. Currently led by Sylvie Poillot, the estate distinguishes itself through its constant pursuit of excellence, combining controlled yields with a profound respect for living organisms to reveal the authenticity of its terroirs.

The vineyard

Hailing from the Côte de Beaune appellation, this cuvée comes from a 0.75-hectare plot planted in the early 1990s. Ideally exposed to the east and located on the mid-slope, these vines thrive on a highly calcareous terroir, composed of white soils rich in stony fragments and a loamy topsoil resting on a limestone subsoil. This unique geology gives the wine its distinctive mineral signature.

The vintage

The year 2023 stood out for a historically abundant harvest in Burgundy. Marked by scorching temperatures reaching 40°C between the end of August and the beginning of September, this season favored a high concentration of sugars while impacting natural acidity. Faced with these extreme conditions, rigorous selection work and green harvesting were necessary to preserve the balance and freshness of the berries.

Winemaking and aging

The grapes for the Côte de Beaune Village "Les Pierres Blanches" 2023 were hand-harvested in mid-September, in keeping with the fruit and leaf days of the lunar calendar. After a gentle whole-bunch pressing lasting two and a half hours, the juice is transferred by gravity. Fermentation is carried out exclusively with indigenous yeasts, followed by aging in French oak barrels (approximately 20% new wood) with a medium toast, allowing the pure expression of the terroir to be preserved.
