Tasting notes

Colour
With a pale yellow hue and green tints, this wine offers a clear, bright appearance.

Nose
Expressive and complex, the bouquet reveals delicate aromas of white flowers, green apple and fresh citrus, harmoniously complemented by mineral, spice and subtle smoky notes.

Palate
Combining finesse and concentration, the palate reveals a refined, elegant texture with a very fine grain. The balance is remarkable, marrying mineral precision with lovely aromatic generosity. The finish lingers on saline minerality and great savouriness.

Food and wine pairing

This white wine pairs wonderfully with fillet of trout, roast poultry or chicken with crayfish. It also perfectly accompanies seafood such as oysters or scallops, as well as delicate mushroom dishes or a Roquefort soufflé.

Service and storage

To fully appreciate this great wine, it is recommended to serve it in a tulip-shaped glass at a temperature between 12 and 14°C. It can be enjoyed now but will continue to evolve favourably in the cellar until around 2033.

The mineral elegance of a great white Burgundy

The estate

Founded in 1999 by the Boisset family, Domaine de la Vougeraie is located in Premeaux-Prissey, in Burgundy, France. This forty-four-hectare estate was born from the desire to bring together a winegrowing heritage patiently built up since the 1960s. Today, the estate is still owned by the founding family and has been run by Sylvie Poillot since 2017. Working according to the principles of biodynamics, the estate strives to reveal the excellence and diversity of its terroirs through a meticulous approach that respects nature and the lunar cycles.

The vineyard

This wine comes from a historic 0.82-hectare plot located in Vougeot, cultivated continuously for nearly nine hundred years. Enclosed by a wall, this monopole benefits from an east-facing exposure and a microclimate influenced by the proximity of the river. The vines, planted between 1984 and 1991, thrive on limestone soil rich in rounded pebbles and pure silt, encouraging deep rooting and bringing natural freshness to the grapes.

The vintage

2023 continues the excellent weather conditions of the previous year. The growing cycle benefited from mild temperatures and ideal sunshine, allowing balanced ripening of the berries. These favourable conditions led to optimal aromatic concentration while preserving the natural acidity essential to the wine's balance, resulting in an early harvest.

Winemaking and aging

The grapes are whole-bunch pressed in a pneumatic press for two and a half hours. After twenty-four hours of settling, alcoholic fermentation begins in stainless steel tanks and finishes in oak barrels. The wine is then aged for sixteen months in barrels, 26% of which are new oak, with lees stirring timed according to the lunar calendar. The wine then rests for a further two months in tank before bottling scheduled according to the moon's cycles.
