The wine reveals a light yellow color, both bright and clear.
Nose
Complex and nuanced, the nose exhales aromas of white flowers and yellow-fleshed fruits, such as peach. It also opens up to exotic notes of passion fruit, underscored by a chalky minerality and a delicate touch of vanilla.
Palate

The Tension and Purity of a Sancerre White Wine
The Estate
Rooted in Amigny since the 17th century, Domaine Denizot is an emblematic family-run estate in the Loire Valley in France. Now led by the sixth generation, embodied by Jennifer and Thibauld Denizot, the estate spans 20.5 hectares divided between the Sancerre and Pouilly-Fumé appellations. Committed to organic viticulture, the estate stands out for its meticulous work on limestone-pebble terroirs. The winemakers favor minimal intervention to reveal the purity, mineral tension, and authenticity of their wines.
The Vineyard
Sourced exclusively from the Côte de l'Épée plot, this single-parcel Sancerre cuvée comes from an extremely steep slope with a 40% incline. Facing south-southeast, these vines benefit from a sun-drenched terroir composed of limestone pebbles and Oxfordian limestone. The high planting density, reaching 7,500 vines per hectare, promotes optimal grape concentration. The vineyard is managed using Guyot Poussard pruning, soil tillage by hoeing, and entirely hand-picked harvests.
The Vintage
The year 2023 produced a wine with lovely freshness. This vintage is characterized by vibrant fruitiness and remarkable liveliness, typical of the region's white wines in their youth.
Winemaking and Aging
The making of the Damocles 2023 begins with a long, gentle pneumatic pressing to preserve the finesse of the juices. Fermentation and aging take place in large, fine-grained French oak vessels, including demi-muids and cigares. After aging for at least a year in wood, the wine is racked and blended, then rests in a single vat for about six months before bottling.
