The estate
Acquired in 1996 by the Devillard family, Domaine des Perdrix spreads over 15 hectares in the Côte de Nuits. Bertrand and Christiane Devillard, accompanied by their children Amaury and Aurore who represent the fifth generation, manage this property today. The estate distinguishes itself by the quasi-exclusivity of its Aux Perdrix Climat, of which it owns 99% of the surface area. Recognized for the quality of its wines from exceptional terroirs, the estate has established itself as a reference in the Nuits-Saint-Georges appellation.
The vineyard
The "Les 8 Ouvrées" cuvée comes from an exceptional plot of 8 ouvrées (approximately 0.34 hectares) located in the northern part of the Aux Perdrix Climat in Nuits-Saint-Georges. The vines, planted in 1922, are nearly 100 years old. Exposed to the east, this plot rests on clay-limestone soils. The venerable age of these vines confers remarkable complexity and depth to the wine.
The vintage
The 2020 vintage in Burgundy benefited from favorable weather conditions allowing for excellent grape maturity. The century-old vines produced fruit of exceptional quality, concentrated and balanced.
Winemaking and aging
The grapes for the Nuits-Saint-Georges 1er cru "Les 8 Ouvrées" 2020 are harvested manually and then carefully sorted. After complete destemming, the berries undergo cold maceration for 4 to 6 days. Alcoholic fermentation, conducted with indigenous yeasts, is accompanied by a total maceration of about 15 days with regular punching down. Aging takes place for 18 months in 228-liter French oak barrels, 60% of which are new wood from the forests of Burgundy, Allier, and Vosges. The wine then remains for two months in stainless steel vats before bottling.
