Tasting notes
Colour
This Vin de France reveals a deep, vivid red colour with purple hues.
Nose
Initially reserved, the bouquet gains in complexity with aeration. It releases aromas of red and black fruits such as raspberry, cherry, blackberry and blackcurrant. Touches of sweet spices, liquorice and menthol then mingle with subtle notes of undergrowth and a mineral imprint.
Palate
The attack is full and enveloping, revealing a silky texture. The perfectly rounded, ripe tannins bring an elegant structure. A lovely acidity lends freshness to the whole, leading into a persistent finish marked by fruit, spice and a delicate saline touch.
Food and wine pairing
This cuvée pairs wonderfully with porcini mushroom risotto, braised lamb or Brie with truffles. More generally, it will be an ideal match for delicate poultry dishes, wild mushroom preparations or pressed-curd cheeses.
Service and storage
For optimal enjoyment, it is recommended to open or decant this Echezeaux Grand Cru "Du Dessus" 2023 a few hours before serving, at a temperature of between 13 and 15°C. This age-worthy wine may be cellared and enjoyed until approximately 2043.

The elegance and minerality of a Burgundy terroir
The estate
Located at the heart of the Côte de Nuits, Domaine des Perdrix is a key reference in Burgundy. Although its history goes back further, the estate underwent a true renaissance when it was taken over by the Devillard family in 1996. Now run by Amaury and Aurore Devillard, the estate spans 15 hectares of vines. Enjoying international renown and having received numerous accolades, Domaine des Perdrix stands out for its philosophy centred on the pure expression of fruit and absolute respect for its terroirs.
The vineyard
The Echezeaux plot covers 0.85 hectares at the historic heart of the appellation. East-facing and situated at an altitude ranging from 260 to 300 metres, the vines grow on a slope that can reach 15%. The soils, of Jurassic origin, consist of marl, clay and a limestone layer of varying depth, giving the wine its distinctive minerality.
The vintage
The year 2023 began with a mild, dry winter, followed by a changeable spring. Late budbreak helped avoid damage from the April frosts. A warm, dry May encouraged early flowering. Although a few storms broke out at the start of summer, véraison took place under radiant sunshine in July. A cooler, more humid August slowed ripening, preserving lovely acidity ahead of a particularly warm September, resulting in a generous, ripe harvest.
Winemaking and aging
The grapes destined for the Echezeaux Grand Cru "Du Dessus" 2023 are hand-harvested, carefully sorted, then 70% destemmed. A cold pre-fermentation maceration of a few days precedes a vatting period of around fifteen days with punching down of the cap, relying solely on indigenous yeasts. The wine is then aged for 16 to 18 months in traditional oak barrels, a large proportion of which are new, before a further two months of refinement in tank.
