The estate
Although the site's winemaking heritage dates back to the Cistercian monks of the 12th century, Domaine du Cellier aux Moines was truly founded in 2004. Located in Givry, in Burgundy, the estate is now run by Philippe and Catherine Pascal. Its vineyard of around 10.5 hectares is farmed according to the artisanal philosophy of "simplex natura". A pioneer in the Côte Chalonnaise, the estate stands out for its strong environmental commitment, holding both organic and biodynamic certifications, and constantly strives to express the purity of its terroirs.
The vineyard
This cuvée comes from a 0.7-hectare plot within the Montagny appellation. Planted in 2012, these vines enjoy a full southern exposure and thrive on the middle and upper slopes, at altitudes ranging from 270 to 310 metres. The terroir consists of clay-limestone soils rich in oolitic stones, which ensure excellent drainage and optimal temperature regulation. The entire vineyard is rigorously farmed biodynamically.
Winemaking and ageing
The Montagny 1er Cru "Les Combes" 2024 is crafted in modern gravity-flow facilities, thereby preserving the integrity of the berries. Fermentation takes place in oak barrels. The wine is then aged on fine lees for around twelve months, a method that gives it its silky texture and aromatic complexity.
