Tasting
Appearance
The wine shows a pale yellow hue enhanced by delicate green highlights.
Nose
Elegant and floral, the bouquet offers aromas of ripe yellow fruit, citrus and white flowers such as acacia. A stony mineral backbone and subtle oak frame the whole.
Palate
Generous yet remarkably clear, the palate is lively and fresh. Driven by limestone tension and citrus notes, this refined, well-structured cuvée extends into a long, persistent finish.
Food and Wine Pairings
This white wine pairs beautifully with grilled fish such as salmon, shellfish such as lobster or scallops, and white poultry in a cream sauce. It also makes a fine match for mushroom risotto or hard cooked-curd cheeses such as Comté.
The Elegance and Mineral Tension of a Great White Wine from Santenay
The Estate
Although the site's Cistercian origins date back to the 12th century, Domaine du Cellier aux Moines in its current form was founded in 2004 by Catherine and Philippe Pascal. Located in Givry, in Burgundy, this family estate covers around twelve hectares spread across the Côte Chalonnaise, the Côte de Beaune and Beaujolais. Driven by a deep commitment to respecting the living world, the estate is certified organic and biodynamic. With its innovative gravity-flow winery, it stands out for its rigorous plot-by-plot approach, producing wines of great purity.
The Vineyard
This cuvée comes from a 26-are micro-plot planted in 1993. Set high above the village of Santenay, this climat enjoys a south-east exposure and an altitude ranging from 252 to 265 metres. The vines thrive on a very thin layer of clay-limestone soil lying directly on fractured hard oolitic limestone. This distinctive terroir, farmed according to biodynamic principles, gives the grapes a particularly pronounced mineral identity.
The Vintage
The 2024 vintage in Burgundy was marked by extreme weather conditions. A lack of sunshine and excessive rainfall led to heavy mildew pressure, while episodes of frost and hail severely reduced yields. However, a particularly mild and sunny September allowed the berries to reach satisfactory ripeness. A late harvest, combined with extremely rigorous hand sorting, ultimately produced concentrated and promising juice.
Winemaking and Ageing
The winemaking of the Santenay 1er Cru "Beauregard" 2024 follows a low-intervention approach, made possible by a gravity-flow winery. After hand harvesting, the berries are pressed very gently. Alcoholic fermentation begins naturally with indigenous yeasts. The wine then undergoes extended ageing in wooden barrels for at least two winters, followed by an additional year of rest in bottle before release.
