It also goes very well with traditional Burgundian dishes such as œufs en meurette and coq au vin. Mild cheeses like Vacherin, Reblochon, or Cîteaux also make excellent pairings.
Service and Cellaring
The Ladoix Village "Chaillot" 2021 is ideally served at a temperature between 15 and 16°C. This wine can be appreciated from three to four years after bottling and has a cellaring potential until around 2033.

The estate
Domaine du Château de Meursault boasts a history dating back to the 11th century, making this property one of the oldest vineyards in Burgundy. Owned by the Halley family since December 2012, under the direction of Olivier Halley, the estate spans sixty-seven hectares of vines distributed across more than one hundred plots throughout the prestigious Côte de Beaune appellations. Certified organic since 2022, the estate distinguishes itself through pioneering initiatives in sustainable development, notably with the planting of a riparian forest of three thousand trees and shrubs to protect the vines from global warming. Stéphane Follin-Arbelet manages the general direction while Emmanuel Escutenaire orchestrates the exceptional vinifications.
The vineyard
The "Les Chaillots" Climat is located in the western part of the Ladoix-Serrigny commune, at the northern end of the Côte de Beaune. This 2.80-hectare plot for Domaine du Château de Meursault benefits from an east-southeast exposure and rests on silty clay-limestone soil. Planted at the bottom of the hill, on the alluvial fan of the Magny-lès-Villers combe, it is composed of marly limestone, Middle and Upper Jurassic marl, as well as brown soils mixed with pebbles and hard limestone gravel. This position and geological composition give these Ladoix wines distinct characteristics.
The vintage
The 2021 vintage in Burgundy marks a return to more traditional harvest dates after three consecutive years of early harvests. Significant volume losses linked to the April frost led to grouped and rapid harvests. After several hotter and drier vintages, 2021 is closer to normal in terms of temperatures, with slightly deficient rainfall. This climatic balance allowed for the production of well-structured wines with beautiful fruit expression.
Winemaking and aging
After a manual harvest, the grapes for the Ladoix Village "Chaillot" 2021 undergo rigorous sorting in the vineyard and upon arrival at the winery. Only the best bunches are placed in vats for a maceration of twelve to fifteen days at a controlled temperature, with one to two punch-downs per day. After alcoholic fermentation, the wine rests for a few days in vats before settling, then is barreled in oak casks. Aging takes place for eighteen months in 228-liter barrels, 50% of which are new oak. Bottling is carried out after light filtration to preserve the wine's character, fragrance, substance, and length on the palate.
