Tasting

Appearance
Displaying an intense ruby red colour, this wine retains a beautiful translucency that reveals its elegance.

Nose
The aromatic bouquet opens with notes of fresh red fruits such as strawberry, raspberry and cherry. It is then enriched with hints of sweet spices, complemented by subtle woody and smoky touches.

Palate
Ample and lingering, the attack offers fruity and woody flavours underpinned by lovely freshness. The tannins are silky and powdery, leading to a refined finish where the red fruit notes endure.

Food and wine pairings

This red wine pairs ideally with roast duck, feathered game such as pheasant, or dishes based on lamb with herbs. It also goes very well with red meats, mushroom risotto, as well as matured cheeses such as Comté or Époisses.

Serving and cellaring

For optimal tasting, it is recommended to serve the Gevrey-Chambertin 1er Cru "La Combe Aux Moines" 2022 at a temperature between 15 and 18°C, in Burgundy-style glasses. Decanting for around thirty minutes is recommended in its youth. This wine can be enjoyed after a few years but will continue to evolve favourably in the cellar for 5 to 15 years, or even beyond 20 years under good storage conditions.

The estate

Founded in 1825 by Pierre Faiveley in Nuits-Saint-Georges, Domaine Faiveley is a historic figure in Burgundy. Today led by Erwan and Eve Faiveley, who embody the seventh generation, the estate extends over approximately 120 to 130 hectares of vines. The domaine stands out through its constant quest for the pure expression of terroir, favouring wines of finesse and elegance. Strongly committed to respecting the environment, the vineyard has recently completed its conversion to organic farming, thereby confirming its values of preserving natural ecosystems.

The vineyard

The 1.03-hectare plot dedicated to this Gevrey-Chambertin is located to the north of the Combe de Lavaux, at an altitude of around 365 metres. Facing east and north-east, the vines, planted between 1933 and 2017, thrive on soils composed of fossiliferous clays and white marls resting on a limestone bedrock. This high-altitude setting and particular exposure encourage a later ripening of the grapes, bringing a characteristic freshness to the berries.

The vintage

The 2022 year was marked by particularly hot and dry weather conditions, with temperatures above the decadal averages and a notable rainfall deficit. Despite this heat, the vegetative cycle allowed for an early harvest, often completed before the end of August. This anticipated harvest was decisive in preserving the natural acidity of the berries and avoiding an excessive accumulation of sugars.

Winemaking and ageing

After a manual harvest and rigorous sorting, the vinification of the Gevrey-Chambertin 1er Cru "La Combe Aux Moines" 2022 takes place in wooden or stainless steel vats. Extraction is intended to be gentle, with measured punching down and pumping over to preserve the fruit. Pressing is carried out delicately by gravity. The wine is then aged for 12 to 18 months in the estate's vaulted cellars, in French oak barrels, of which the proportion of new wood varies between 40 and 50%.
