Revealing a classic red hue, this wine displays a ruby to crimson colour of beautiful intensity.
Nose
The aromatic bouquet opens with intense notes of red fruits such as cherry, raspberry and redcurrant. It is enriched with floral nuances of peony and rose petal, mingled with more complex touches of delicately smoked meats, sweet spices, liquorice and damp earth.
Palate
The palate offers beautiful freshness and a delicate texture, supported by fine tannins. Flavours of blackberry, pepper and chocolate emerge, balanced by a vibrant natural acidity. The long, pure finish is distinguished by remarkable mineral precision and a mouth-watering tension.
Food and wine pairing
Ideal alongside cooked red meats or game, this wine pairs perfectly with duck breast in cherry sauce, roast veal with mushrooms, or wild boar. It also enhances high-quality raw-milk cheeses beautifully, whether a robust Époisses or a matured Comté.

The elegance and mineral precision of a Volnay Premier Cru
The estate
Located in Burgundy, the Domaine François Mikulski was officially established in 1992 by François and his wife Marie-Pierre, following the inheritance of vines from his uncle. Today, the estate's continuity is ensured by Thomas Boccon, François's son-in-law, who co-directs the domaine and serves as winemaker. Spanning an area of 8.5 to 9 hectares, the vineyard is cultivated using uncertified organic methods. Known for its distinctive handwritten labels, the domaine favours a minimal-intervention approach to allow the terroir to fully express itself.
The vineyard
Although geographically located in the commune of Meursault, the Santenots du Milieu climat produces red wines classified under the Volnay appellation. The domaine's plots, planted in 1947 and 1976, benefit from an east-facing exposure on a sunny slope. The vines thrive on shallow soils composed of red clay resting on a bedrock of hard limestone, creating a warm microclimate conducive to optimal grape ripening. Cultivation is carried out at high density with strict pruning to limit yields.
The vintage
The year 2023 was characterised by a relatively calm growing cycle with no major incidents in France. The growing season progressed steadily, punctuated by a heatwave at harvest time, resulting in a generous and high-quality yield.
Winemaking and aging
For the production of this Volnay 1er Cru "Santenots du Milieu" 2023, the grapes are fully destemmed before fermenting in stainless steel tanks for about a fortnight, driven by indigenous yeasts. The wine is then transferred to French oak barrels, 35% of which are new, for an aging period of at least fourteen months.
