Tasting

Colour
The colour reveals a beautiful golden hue, ranging from pale to medium, enhanced by luminous highlights.

Nose
The aromatic bouquet opens with indulgent notes of caramelized pear and spice, enriched by buttery, creamy touches. With aeration, subtle citrus nuances and a mineral backbone emerge.

Palate
The attack offers a round, unctuous texture that coats the palate, perfectly balanced by beautiful acidic tension and a finely chiseled minerality. The remarkably persistent finish lingers on long saline and lemony notes.

Food and Wine Pairing

This white wine from France pairs wonderfully with poultry in creamy sauces, such as roast chicken or coq au vin. It also enhances freshwater fish like pikeperch or trout with beurre blanc, as well as aged regional cheeses such as Comté, Morbier, or Mont d'Or.

Service and Storage

For optimal enjoyment of the Chardonnay "Charmille" 2022, it is recommended to serve it at a temperature of around 8°C, taking care to open the bottle an hour beforehand. Gentle decanting may be considered should any natural sediment be present. This wine can be enjoyed now, but its structure allows it to age favorably in the cellar until around 2030, or even beyond.

The Pure, Mineral Expression of a Great White Wine from the Jura

The Estate

Officially founded in 1982 by Jean-Louis Overnoy following the conversion of a mixed farming operation, Domaine Guillaume Overnoy today spans 5.5 hectares in the Jura. Since 2013, Guillaume Overnoy has been at the helm of the estate, brilliantly taking up the family torch at the age of 19. Certified organic, the estate stands out for its philosophy of respect for the living world, favoring natural winemaking and long aging periods to express the full authenticity of its terroirs.

The Vineyard

Located within the Côtes du Jura appellation, the "Charmille" plot covers 0.70 hectares within the En Poinot lieu-dit, in Orbagna. West-facing and planted at an altitude of 270 meters on a mid-slope, the vines, aged between 10 and 90 years, thrive on red and orange Triassic marl soils, rich in clay and dotted with limestone. This singular terroir is cultivated according to organic farming principles.

The Vintage

The year 2022 offered particularly mild weather conditions in the region. Generous sunshine allowed the berries to reach optimal ripeness while preserving excellent natural acidity, essential to the balance of great white wines.

Winemaking and Aging

After a gentle whole-bunch pressing, fermentation of the Chardonnay "Charmille" 2022 begins in stainless steel tanks using indigenous yeasts. The wine is then transferred into Burgundy oak barrels that have previously held several wines, for an extended aging period of 22 to 24 months. During this time, the barrels are regularly topped up. The wine is finally bottled without fining or filtration.
