From a warm microclimate, with vines planted largely in 1989 on hard limestone, the 2023 Saint-Aubin 1er Cru En Remilly has turned out beautifully, rising from the glass with aromas of yellow apple, peach, pear and white flowers. Medium- to full-bodied, open-knit and textural, it is expressive, with a generous core of fruit, underpinned by racy acidity and concluding in a long, saline finish. Perched above the Chevalier-Montrachet and Puligny-Montrachet Caillerets vineyards, it possesses the tension and cut characteristic of such high-altitude sites.

Tasting

Colour
The colour reveals a pale gold hue enhanced by delicate green highlights.

Nose
Displaying great finesse, the nose opens with citrus aromas, notably citron, mingled with floral notes of linden blossom. It then evolves towards gourmand touches of juicy pear and apple tarte Tatin, all supported by a mineral backbone and subtle spice notes.

Palate
Combining power and minerality, the palate offers a fleshy, generous texture. Flavours of white fruit, such as peach and pear, give way to more exotic notes in the mid-palate. The finish, of impressive length, stands out for its remarkable saline, stony tension.

Food and wine pairing

This white wine pairs wonderfully with refined seafood dishes, such as roasted monkfish with a hazelnut oil hollandaise sauce, John Dory fillets with crunchy vegetables, or a scallop carpaccio with citrus. It will also enhance foie gras preparations beautifully.

Serving and cellaring

Still somewhat reserved in its youth, this Saint-Aubin 1er Cru "En Remilly" 2023 requires prior aeration to reveal its full complexity. It can be enjoyed at its best between 2026 and 2033, and will continue to evolve favourably until around 2038.

The precision and minerality of a great white Burgundy

The estate

Officially founded in 1973 by Hubert Lamy, Domaine Hubert Lamy draws on a family winemaking heritage in Burgundy (France) dating back to 1640. Now run by Olivier Lamy and his wife Karine, the estate spans 18.5 hectares across prestigious appellations of the Côte de Beaune. A pioneer of excellence in viticulture, the estate stands out for its organic certification and innovative approach to ultra-high-density planting. This rigorous philosophy makes it possible to produce wines of crystalline precision, placing the estate among the region's most important benchmarks.

The vineyard

This wine comes from the "En Remilly" climat, an exceptional two-hectare terroir located in Saint-Aubin, replanted in 1989. Overlooking the famous Grand Cru plots, this high-altitude vineyard benefits from an ideal south to south-east exposure. The vines, around thirty years old, thrive on shallow, very stony clay-limestone soils, encouraging intense minerality and optimal grape concentration.

The vintage

The 2023 vintage benefited from conditions allowing optimal phenolic ripeness to be reached. The harvest was carried out entirely by hand, with rigorous sorting to retain only the healthiest, perfectly ripe bunches.

Winemaking and aging

After gentle pneumatic pressing and static settling for around twenty-four hours, fermentation of the Saint-Aubin 1er Cru "En Remilly" 2023 took place at low temperature over nearly ninety days, with no significant lees stirring. The wine then underwent malolactic fermentation. Aging continued for twelve to eighteen months in 600-litre demi-muids, with a very small proportion of new oak, in order to preserve the wine's freshness and sense of terroir.
