Tasting Notes
Appearance
This wine displays a beautiful deep golden-yellow colour, enhanced by delicate pearly highlights.
Nose
Complex and evolving, it reveals a rich aromatic bouquet led by notes of dried fruits such as walnut, almond and hazelnut. These are joined by touches of candied citrus, ripe apple and biscuit, complemented by subtle nuances of honey and vanilla.
Palate
Dry, invigorating and saline, the palate offers a full, velvety texture. The whole is perfectly balanced by a lovely mineral tension, leading to a long, fresh and delicately spiced finish.
Food and Wine Pairings
This cuvée pairs wonderfully with grilled fish such as sea bream or sea bass, roasted white meats, or veal sweetbreads. It also goes very well with Mediterranean dishes, lightly spiced Asian cuisine, and mature cheeses such as Comté or sheep's milk tomme.
Serving and Cellaring
To fully appreciate this Alquimia cuvée, it is recommended to serve it at a temperature between 12 and 13°C. With excellent ageing potential, it can be cellared for 20 years or more.
The Elegance and Finesse of a White Vin de France
The Estate
Founded in 2001, Domaine Le Roc Des Anges is located in the Pyrénées-Orientales, at the heart of Roussillon. Run by Marjorie and Stéphane Gallet, the estate spans around 40 hectares of vines farmed organically and biodynamically. The domaine quickly established itself as a key reference in the region thanks to its constant pursuit of freshness and elegance. By showcasing unique terroirs of schist and quartz, the owners craft distinctive cuvées that combine respect for living soils with technical mastery, exemplified by their remarkable flor-aged wines.
The Vineyard
The grapes for this Vin de France come from plots aged 40 to 100 years, located in the commune of Montner. The terroir is characterised by very poor soils made up of ancient schist broken down into thin sheets, on the north-facing slope of the Força Réal massif. These demanding conditions naturally limit yields to around 15 hl/ha, encouraging optimal concentration in the berries.
The Blend
This cuvée results from a meticulous blend of barrels from the 2021 and 2022 vintages.
Winemaking and Ageing
The grapes are hand-harvested in small 20 kg crates to preserve the integrity of the bunches. The distinctiveness of this Alquimia cuvée lies in its oxidative ageing. The wine rests without topping up in old Burgundian barrels, allowing a protective veil of yeast to develop. This delicate process continued until bottling, which took place in February 2024.

This blend celebrates traditional varieties of the region: Macabeu, Grenache Blanc and Grenache Gris.
