The estate
Founded in 1997, Domaine Nicolas Rossignol today spans approximately 17 hectares in the heart of Burgundy, along the prestigious Côte de Beaune. Representing the fifth generation of a winegrowing lineage, Nicolas Rossignol currently heads the estate. Drawing on extensive international experience, he has steered the style of his wines towards a philosophy of infusion rather than extraction. The estate stands out for its environmentally respectful approach, inspired by biodynamics, aimed at expressing the purest authenticity of its terroirs.
The vineyard
The vines dedicated to this cuvée flourish on the renowned terroirs of Burgundy. The vineyard is managed according to the principles of sustainable farming, with no use of chemical herbicides. The soils are mechanically worked through regular ploughing to encourage biodiversity and improve soil structure. Vineyard operations, as well as the harvest, follow the rhythm of the lunar calendar, reflecting a deep connection with the natural environment.
The vintage
2023 stands out as an excellent season for the region's white wines. The growing cycle benefited from particularly balanced weather conditions, marked by adequate rainfall, aerating winds and moderate temperatures. The absence of water stress or excessive heat, including during the September harvest, allowed the berries to retain optimal natural acidity and remarkable aromatic finesse.
Winemaking and aging
The grapes for this Aligoté de Bourgogne 2023 are harvested by hand in small crates to preserve the integrity of the bunches, followed by rigorous sorting. Whole-bunch pressing precedes fermentation with indigenous yeasts under controlled temperatures. True to the estate's philosophy, malolactic fermentation is deliberately delayed until the following spring. The wine is then aged on fine lees to gain complexity, before being bottled without fining or filtration, in keeping with the lunar cycles.
