Appearance
This wine reveals a beautiful pale to light golden hue, sometimes tinged with subtle green reflections in its youth.

Nose
Highly expressive, the bouquet unveils generous aromas of yellow and white-fleshed fruits such as peach and pear, intertwined with notes of white flowers like acacia. The whole is underlined by delicate touches of honey, fresh butter, and a chalky minerality.

Palate
Ample and structured, the palate offers a satin-like texture and measured richness. The perfectly integrated acidity brings a beautiful mineral tension, leading to a persistent and harmonious finish, marked by fruit and subtle oaky nuances.

Food and wine pairings

This great white wine pairs wonderfully with noble fish in creamy sauces, pan-seared shellfish such as lobster or scallops, as well as high-quality poultry in cream sauce. It will also enhance a mushroom risotto or cooked pressed cheeses such as Comté or Beaufort.

Serving and cellaring

Endowed with excellent ageing potential, this wine can be kept in the cellar to reveal all its complexity and will be ideal to enjoy until around 2037.

The estate

Founded in the 1920s by Pierre Ramonet, Domaine Ramonet (today known as Domaine Jean-Claude Ramonet) is an essential signature. Located in Chassagne-Montrachet, the estate stretches over approximately 17 hectares of vines. Renowned worldwide for the excellence and purity of its Chardonnays, the house perpetuates a demanding family expertise. Today, management is entrusted to Michaël and Pierre-François Ramonet, while drawing on the technical heritage and invaluable experience of Jean-Claude and Noël Ramonet.

The vineyard

The Climat of La Boudriotte lies to the east and south of the village. This exceptional terroir rests on deep clay-limestone soils, combining clays that bring flesh to the wine with limestone stones that promote drainage and mineral tension. This Burgundy estate practises precise sustainable viticulture, with high planting densities, a large proportion of massal selection, and strictly controlled yields to ensure the concentration of the grapes.

The vintage

The year 2022 is recognised as a solar vintage. Characterised by warm and dry climatic conditions, this year allowed for perfect ripening of the berries. Thanks to rigorous management of the growth cycle, the heat was perfectly mastered, yielding generous grapes while preserving a lovely natural freshness.

Vinification and ageing

The manual harvest is subject to rigorous sorting. In the cellar, the grapes are pressed as whole clusters in an extremely gentle manner. Fermentation takes place spontaneously with indigenous yeasts over an extended period. The wine is then aged in French oak barrels on fine lees, with regular bâtonnage, in order to enrich the texture while preserving the purity and brilliance of the wine.
