Tasting
Appearance
The wine displays a brilliant ruby red colour, at once deep and translucent, enhanced by luminous highlights.
Nose
The aromatic bouquet opens with intense notes of ripe black fruit such as blackberry and plum, intertwined with fresh red fruit like cherry and raspberry. The whole is lifted by delicate floral touches of rose petals, sweet spices, white pepper and subtle hints of eucalyptus, dark chocolate and earth.
Palate
On the palate, the wine offers a dense, concentrated texture, supported by exceptionally fine tannins. The flesh is pure and juicy, carried by a lovely fresh acidity. The finish is remarkably long, elegant and mouth-watering.
Food and wine pairings
This wine pairs beautifully with characterful meats such as venison fillet, tender veal or feathered game like pigeon. It will also enhance slow-cooked dishes with wild mushrooms or generous platters of fine charcuterie.
Serving and ageing
To fully appreciate this Gevrey-Chambertin Village "1859" 2023, it is best served at a temperature between 16 and 17°C. Gentle aeration in large glasses will allow its full complexity to unfold. With its fine structure, this wine can be enjoyed in its youth but will continue to improve in the cellar until around 2038.
The density and elegance of a Gevrey-Chambertin wine
The estate
Founded in its current form in 1919, Domaine Trapet is a benchmark estate in Burgundy. Located in Gevrey-Chambertin, the property spans 18.5 hectares of vines. Today, Jean-Louis Trapet runs the domaine with his wife Andrée and their sons Pierre and Louis. Pioneers of biodynamics since 1990, the family farms its land with deep respect for living ecosystems. The domaine stands out for its artisanal, minimal-intervention approach, producing wines of great purity that precisely express the full complexity of their terroirs.
The vineyard
This French red wine comes from two historic lieux-dits within the commune of Gevrey-Chambertin: En Dérée, the first plot acquired by the family in 1859, and Champerrier. Ideally situated mid-slope, these very old vines, some of them over a century old, are trained on échalas. This individual staking system, combined with certified biodynamic viticulture, encourages deep rooting and exceptional soil vitality, yielding grapes of rare concentration.
The vintage
The 2023 vintage stood out for particularly mild weather conditions, which favoured rapid and optimal ripening of the berries. The relatively early harvest took place in excellent conditions during the first half of September. This benign climate made it possible to pick perfectly healthy grapes, combining fine phenolic richness with an excellent level of natural acidity.
Vinification and ageing
The grapes for the Gevrey-Chambertin Village "1859" 2023 are harvested by hand, followed by meticulous sorting. Vinification, carried out gently by gravity with indigenous yeasts, includes around 80% whole clusters. The use of sulphur is kept to an absolute minimum. The wine is then aged in oak barrels, with a measured proportion of around 30% new wood, to give it structure without masking the brilliance of the fruit.
