The pure expression of a great Alsace terroir by Domaine Weinbach
The estate
Located in Kaysersberg in the heart of the Alsace wine region, Domaine Weinbach is centred around the famous Clos des Capucins. While the monastic origins of the site date back to 1612, the true founding date of the family estate is 1898, when it was acquired by the Faller brothers. Today, this prestigious property is run by Catherine Faller and her two sons, Eddy and Théo. The estate covers around 38 hectares and stands out for its deep commitment to organic and biodynamic farming, producing terroir-driven wines of exceptional quality.
The vineyard
The grapes come from the prestigious Grand Cru Schlossberg, the very first terroir to be classified as Grand Cru in Alsace. The plots, located mid-slope on steep south-facing hillsides, benefit from ideal sun exposure. The vines, around 70 years old, thrive on shallow, sandy and granitic soils, which naturally regulate excess water and drought. The whole vineyard is cultivated according to the principles of organic and biodynamic farming, with Ecocert and Demeter certifications. Short pruning is practised in order to limit yields and ensure optimal ripeness.
Vinification and ageing
After a manual harvest carried out at perfect ripeness, the whole bunches undergo a slow and very gentle pneumatic pressing. Fermentation of this Riesling Grand Cru "Schlossberg" Cuvée Sainte Catherine 2024 then begins spontaneously thanks to the action of indigenous yeasts. Finally, the wine benefits from meticulous ageing lasting ten months, resting in old oak foudres to preserve all the purity of its aromas.
Grape variety
This cuvée is made exclusively from Riesling.
