Tasting
Colour
The colour reveals a very pale, luminous pink hue, with great clarity.
Nose
The nose reveals beautiful aromatic complexity, opening onto notes of ripe white-fleshed fruits such as peach and apricot, accompanied by floral touches of rose petal. With aeration, red fruit and exotic fruit aromas emerge, along with subtle spicy nuances of white pepper.
Palate
From the very first sip, the palate stands out for its freshness and mineral precision. Well-balanced, it offers a silky texture, supported by a delicate structure. The finish lingers at length on a mineral backbone.
Food and wine pairing
This rosé wine can be enjoyed both as an aperitif and alongside meals. It pairs well with Mediterranean dishes, grilled fish, and seafood, as well as more refined preparations such as seafood carpaccio, lobster, or foie gras.
Service and storage
For optimal enjoyment, it is recommended to serve the Clos du Temple 2023 at a temperature of around 10°C. While it can be enjoyed young, this wine also has strong aging potential, allowing it to develop favourably in the cellar for several years.
The authentic expression of a Languedoc rosé
The estate
Founded in 1992 by former professional rugby player Gérard Bertrand, the eponymous company has become a benchmark in Languedoc winemaking. Driven by a determination to reveal the potential of the terroirs of southern France, the current owner, Gérard Bertrand, has built an estate that now spans nearly 1,000 hectares. A pioneer committed to environmental respect, the estate stands out for its dedication to biodynamic viticulture, producing quality wines that shine on the international stage.
The vineyard
Nestled in the heart of the Languedoc-Cabrières appellation, the vineyard spans around a dozen hectares divided into eleven plots. Located at an altitude of approximately 240 metres, the vines benefit from south and southwest exposure, offering a balance between Mediterranean sunshine and the freshness brought by elevation. The soils, composed of schist and limestone, give the wine its mineral identity. Fully managed under biodynamic farming, the estate favours working the land with horses and mules to preserve soil structure.
Winemaking and aging
The making of Clos du Temple 2023 is the subject of meticulous care. Following manual morning harvesting, the grapes undergo cold pressing at 5°C to preserve the delicacy of the aromas and the pale colour of the juice. This is followed by natural low-temperature settling, then a slow fermentation. The wine is then aged for six to eight months in new French oak barrels, with regular lees stirring. The final blend is carried out according to the biodynamic calendar.
Grape varieties
This blend brings together four red grape varieties (Grenache Noir, Cinsault, Syrah, Mourvèdre) and one white grape variety (Viognier).
