Description
Characteristics and tasting notes for the "St. Agnès" 2023 cuvée from Domaine Héritage du Pic Saint-Loup
Tasting
Colour
Beautifully concentrated, the deep, bright red colour immediately catches the eye.
Nose
The aromatic bouquet is expressive and complex. It exudes scents of black fruit and spice, intertwined with delicate floral notes reminiscent of violet. Touches of black olive, garrigue and subtle peppery accents round out the ensemble.
Palate
The attack is both full-bodied and marked by great freshness. The palate stands out for its elegance and grace, supported by particularly refined tannins. The balance is well-controlled, leading to a long, saline finish evoking the minerality of the terroir.
Food and wine pairing
This red wine pairs wonderfully with roasted meats or dishes in sauce, such as beef bourguignon or coq au vin. It will also enhance game such as wild boar or duck, as well as roasted poultry or herb-grilled lamb. When it comes to cheese, opt for cow's or goat's milk cheeses with moderate intensity.
Serving and storage
The "St. Agnès" 2023 cuvée can be fully enjoyed today and will continue to evolve favourably until at least 2033.

The estate
Located in Saint-Mathieu-de-Tréviers in the Languedoc, Domaine Héritage du Pic Saint-Loup draws on a winemaking heritage dating back to the 12th century. The independent estate was officially founded in 1997, driven by brothers Xavier, Pierre and Jean-Marc Ravaille, who still run the domaine today. As pioneers, they have greatly contributed to shaping the identity of the appellation. The 45-hectare vineyard is farmed with a deep environmental commitment, certified organic and applying the principles of biodynamics.
The vineyard
This cuvée comes from a careful selection of vines aged between 40 and 50 years old. These high-altitude plots, located at around 350 metres on the limestone slopes of Pic Saint-Loup, sit on stony soils. This unique terroir, subject to significant thermal swings between hot days and cool nights, allows for slow ripening of the grapes while preserving a lovely natural freshness.
Winemaking and ageing
The grapes for the "St. Agnès" 2023 cuvée are harvested by hand during the cool morning hours to preserve the brightness of the aromas. In the cellar, fermentation begins naturally thanks to indigenous yeasts. The wine then undergoes careful ageing, preserving the pure expression of fruit and terroir.
Grape varieties
Syrah, Grenache, Mourvèdre.
