Description
Characteristics and Tasting Tips for the Auxey-Duresses Village « Les Hautés » 2024 by Jean-Charles Fagot
Tasting
Colour
This wine displays a luminous, pale yellow hue with subtle green glints that immediately hint at its freshness.
Nose
The nose opens with notes of citrus and lemon blossom, accompanied by green apple and floral touches, all rounded off by a discreet hint of oak reminiscent of toasted almond.
Palate
The attack is lively, driven by a saline, mineral backbone that structures the whole, while lees ageing brings roundness and texture, leading to a finish that is both fresh and saline.
Food and Wine Pairing
This wine pairs beautifully with seafood and shellfish, white fish cooked in butter and lemon, and roast poultry served with a light cream sauce. It also lends itself to vegetarian dishes such as ratatouille or mushroom risotto, and goes well with pressed cheeses or mature goat's cheeses.
Serving and Cellaring
The Auxey-Duresses Village « Les Hautés » 2024 benefits from careful ageing that will allow it to evolve favourably once bottled. Ideally enjoyed within three to five years of bottling, it will also appeal over the longer term to those who wish to discover its complexity at full maturity.
A Mineral and Fresh Auxey-Duresses from Domaine Jean-Charles Fagot
The Estate
Jean-Charles Fagot has been making wine under his own name since 1989, in Corpeau, between Chagny and Puligny-Montrachet, in the heart of the Côte de Beaune in Burgundy. The owner of a small vineyard complemented by a négociant activity, he practises lutte raisonnée, a sustainable approach to viticulture. Since 1998, he has also been a restaurateur at the Auberge du Vieux Vigneron, where his wines naturally find their place at the table, confirming his dual roots as both winemaker and man of the terroir.
The Vineyard
The Les Hautés cuvée comes from a lieu-dit located in the Auxey-Duresses appellation, on a south-east-facing slope close to wooded edges that foster a cool microclimate. The soils are marl-limestone, and the well-ripened vines yield a naturally taut, mineral wine.
Vinification and Ageing
The Auxey-Duresses Village « Les Hautés » 2024 is crafted according to a minimal-intervention winemaking philosophy, with gentle pressing and fermentation in neutral vessels to preserve the purity of the fruit. Ageing continues for approximately one year in barrels, followed by a finishing period of nearly five months in stainless steel tanks.
Grape Variety
100% Chardonnay.
