Tasting
Colour
The colour reveals a pale yellow hue enhanced by delicate green highlights.
Nose
The aromatic bouquet opens with notes of yellow stone fruits such as peach and apricot. It then evolves towards subtle floral touches accompanied by an iodine-like minerality reminiscent of oyster shell.
Palate
The attack is lively, carried by lovely acidity and generous texture. The mid-palate proves gourmand, juicy and refreshing, offering a lovely balance. The finish lingers on spicy notes and a very characteristic maritime salinity.
Food and wine pairing
This wine pairs wonderfully with a seafood platter, and particularly with oysters. It will also enhance delicate white fish, a vegetable risotto or chicken marinated in candied lemon.
Service and storage
For an optimal tasting experience, it is recommended to serve the Chablis Village "La Sereine" 2022 at a temperature between 10 and 12°C. While already very enjoyable to drink today, this wine has the structure needed to age for a few more years in the cellar.

The estate
Founded in 1923 at the initiative of Abbé Balitrand, La Chablisienne is an essential institution in Burgundy. This cooperative winery today brings together nearly 250 winegrowers, representing around a quarter of the appellation's total vineyard area. Currently led by Damien Leclerc, the estate stands out for its quality standards and technical innovations. Guardian of the legendary Château Grenouilles since 2003, La Chablisienne shines internationally, brilliantly showcasing the richness of the local terroirs through a wide range of cuvées.
The vineyard
Located in the heart of Burgundy, the Chablis vineyard stretches on either side of the Serein valley. Subject to a cool continental climate, the vines grow on subsoils marked by a strong presence of limestone. These particular geological and climatic conditions, although sometimes exposed to spring frost, help shape the mineral and saline identity so typical of the region.
The vintage
The year 2022 benefited from particularly favourable weather conditions in the region. This favourable growing cycle allowed the grapes to reach optimal ripeness, giving rise to balanced wines with lovely structure.
Winemaking and aging
The making of the Chablis Village "La Sereine" 2022 begins with a rigorous selection of the musts by the technical team. In order to preserve aromatic purity and mineral precision, fermentation and aging take place exclusively in inert vessels, such as stainless steel or concrete tanks. The complete absence of oak barrels helps promote yeast autolysis and develop the wine's complexity while preserving its original freshness.
