Decanter

Supple and so friendly and generous straight away, charming, fleshy and ripe, chewy even, but balanced by a really juicy, strawberry, red berry succulent and mouthwatering acidity. But ending on a flint, wet stone finish so you really get a three part wine here – chewy and upfront, bright and energetic and crisp and mineral. Cool, liquorice and cola too. Such great purity of fruit and detail on show. Texturally it’s great. Elegant.

This is highly appealing, a little more Merlot in the blend and certainly it gives a ripe roundness but the location of these Merlots always adds structure also. Energy, black fruit, campfire, very enjoyable. 50% new oak. 3.67 pH.

The bouquet of Griffons unfolds with a filigree-like delicacy, gradually revealing its nuances. Freshness takes center stage, leading to aromas of red and black berries, followed by a hint of licorice and black pepper. The aging process also shows through in the background, supporting and enhancing the aromatic expression and showcasing every element at play. On the palate, the wine follows the same path as the bouquet: step by step. Alongside its creamy texture, it has power, yet never at the expense of finesse. The very definition of a great wine. It is linear, harmonious, and driven by the vibrant, refreshing lift of its acidity. A wine entering a new era, here to present its personality and ambitions. A wine in its own right, distinguished by its precision and serenity.

Deep, intense purple colour. A very aromatic nose: fruity, subtle, pure and even noble. Delicious on the attack, silky on the mid-palate, with great poise on the palate and a slow, unhurried development, the wine finishes long and sappy, with the aromas returning on the lingering finish. Meticulously crafted and impossible to spit out. Blend: 62% Merlot, 34% Cabernet Sauvignon, 4% Cabernet Franc. Alcohol: 13.2% – pH: 3.67. Yield: 24 hl/ha. Ageing: 50% in new barrels and 50% in one-wine barrels for 15 months.

The overall impression shows perfectly controlled power, remarkable balance, and highly promising tannins.

Food and wine pairings
This cuvée pairs beautifully with roasted or grilled red meats, such as rib steak or lamb chops. It also enhances rich sauced dishes, game such as wild boar or venison, as well as recipes based on mushrooms or truffles. For cheeses, opt for aged hard cheeses such as Comté, Parmesan, or mature Cheddar.

Serving and cellaring
This wine reveals its full potential when served at around 15.5°C. This vintage has excellent aging potential and can be cellared until around 2045.

The elegance and power of a great Pauillac

The estate
Founded in 1694 following the marriage of Thérèse de Rauzan and Baron Jacques Pichon de Longueville, the Château Pichon Baron is an iconic figure of the Bordeaux region. This prestigious estate spans 75 hectares in the heart of the Médoc. Classified as a Second Grand Cru in 1855, it has belonged to the AXA Millésimes group since 1987. Today, under the technical direction of Pierre Montégut, the estate combines exceptional historical heritage with modern and sustainable viticultural practices to produce wines of remarkable quality.

The vineyard
Located on the left bank of the Gironde estuary, this terroir of the Pauillac appellation benefits from a moderate maritime climate. The vines, averaging 35 years of age and planted at a high density of 9,600 vines per hectare, thrive on soils composed of Quaternary gravel, large pebbles, and sand. This rolling landscape ensures optimal natural drainage. The estate favors an environmentally respectful approach, incorporating cover crops and the use of natural compost to preserve biodiversity and soil health.

The vintage
The year 2025 began with a rather dry and moderately mild winter, leading to early budburst with low yields, without any frost episodes. The spring, mild but humid, increased the risk of mildew before quickly giving way to a hot, dry summer climate. At the end of May, flowering took place rapidly and very evenly. After a cooler and slightly rainy period at the end of July, allowing the vines to recover, véraison began on July 30. A new heatwave in mid-August accelerated ripening, followed by beneficial rainfall in early September. Fine weather in mid-September enabled very early, high-quality harvests, spread over 16 days, just before the rainfall of September 20.

Winemaking and aging
The berries undergo extremely rigorous sorting during the harvest, in the winery, and then via an optical sorting system, eliminating 3 to 5% of the crop to retain only the finest fruit. Vatting is carried out by gravity. Vinification incorporates bioprotection as well as the use of indigenous yeasts for low-temperature fermentations. Extraction is kept gentle, with light pump-overs and rack-and-return operations. Finally, the wine is aged for 15 months in barrels, equally divided between new barrels and one-wine barrels. Alcohol content: 13.2% vol.
