Tasting
Colour
Strikingly clear, the colour reveals a pale yellow hue enhanced by brilliant green highlights.
Nose
Delicate in its youth, the bouquet gradually opens onto aromas of white-fleshed fruits such as pear and quince, lifted by a touch of fresh apple. On aeration, it gains in complexity with notes of citrus fruits (lemon, orange zest), acacia blossom and fennel, all wrapped in a mineral framework with subtle vanilla nuances.
Palate
The palate is seductive, with a round, rich and supple texture. The mid-palate, generous and full-bodied, unfolds fruity flavours (pear, grapefruit) and floral notes (chamomile), enriched with hints of almond, hazelnut and a light touch of honey. The whole is perfectly balanced by a fine tension that stretches the wine towards a long finish, marked by a saline, chalky minerality.
Food and wine pairing
This great white wine pairs wonderfully with grilled or steamed fish, as well as shellfish such as lobster or a crab and avocado salad. It will also elevate white meats in creamy sauces, herb-roasted poultry, or soft-ripened cheeses such as Coulommiers.
Service and storage
For an optimal tasting experience, it is recommended to serve the Mas Jullien Blanc 2023 at a temperature between 10 and 14°C, taking care to decant it while young. With remarkable ageing potential, this wine can be cellared until around 2038.

The estate
Founded in 1985 by Olivier Jullien, who remains its current owner, Mas Jullien is a pioneering estate in the qualitative renewal of the Languedoc. Located in Jonquières, this visionary property today spans a vineyard of 18 hectares, its surface area having been deliberately reduced to encourage biodiversity. A true regional benchmark, the estate stands out for its deep commitment to preserving the ecosystem, applying biodynamic farming methods to express the richness of its terroirs with the utmost authenticity.
The vineyard
Produced under IGP Pays de l'Hérault, this wine comes from around five hectares of vines dedicated to white grape varieties. The vineyard rises up the rocky foothills of the Larzac plateau, with plots terraced between 150 and over 400 metres in altitude. This complex geological mosaic is made up of limestone scree, schist, ferruginous sandstone and deep marl. The vines, worked by hand or with horses in the greatest respect for the environment, benefit from a Mediterranean climate tempered by altitude, offering cool nights and purifying winds.
The vintage
2023 was marked by a particularly hot summer season, typical of the Mediterranean influences in the region. However, thanks to the altitude of the plots and the moderating influence of the Larzac plateau, the vines benefited from perfectly balanced climatic conditions. This allowed the berries to reach optimal ripeness while preserving beautiful natural freshness.
Winemaking and ageing
After manual, plot-by-plot harvesting and rigorous sorting, the Mas Jullien Blanc 2023 is vinified using indigenous yeasts. Fermentation takes place in demi-muids, large neutral oak vessels. The wine then undergoes ageing on the lees for around a year, during which a spontaneous malolactic fermentation takes place, giving the wine its characteristic texture and aromatic complexity.
Grape varieties
The blend is made up of Carignan Blanc (55%), Chenin Blanc (30%) and Grenache Blanc (10%), rounded out by small proportions of Clairette, Roussanne, Viognier and Petit Manseng.
