Description
Characteristics and tasting notes of the Chassagne-Montrachet 1er cru "Abbaye de Morgeot" Domaine 2025 by Olivier Leflaive
Tasting
Appearance
The wine reveals a lovely pale golden-yellow hue, typical of the great white wines from this region of France, which may deepen over time.
Nose
The aromatic bouquet displays great complexity, blending aromas of ripe fruit such as vineyard peach and dried fruits with delicate notes of white flowers, honey, citrus and a subtle hint of gunflint.
Palate
Ample and fleshy, the palate offers a velvety, full-bodied texture. This richness is perfectly balanced by a beautiful acidic tension and a crisp mineral backbone, leading to a finish of remarkable depth.
Food and wine pairings
This wine pairs wonderfully with white meats, poultry cooked in a cream sauce, or refined seafood dishes such as shellfish and crustaceans.
Serving and cellaring
For optimal tasting, it is recommended to serve this Chassagne-Montrachet 1er cru "Abbaye de Morgeot" Domaine 2025 at a temperature between 12 and 14°C. Endowed with fine ageing potential, this wine can be cellared and enjoyed until around 2035.
The elegance and richness of a great white wine from Chassagne-Montrachet
The estate
Founded in 1984, the Olivier Leflaive House is a leading figure in Burgundy, located in the heart of Puligny-Montrachet in France. Born from the forward-thinking vision of its creator, this family-run structure stands out for its dual identity as both a wine estate and a négociant house. Today, the property is still led by its co-owners, Olivier and Patrick Leflaive. The estate covers 26 hectares of its own vines, spread across prestigious climats. Since 2024, technical management has been entrusted to oenologist Solène Panigai, who upholds the elegant style of the house's wines.
The vineyard
This wine comes from the vast and historic climat of Chassagne-Montrachet, located in the south of the Côte de Beaune. The vines, averaging between 30 and 45 years old, thrive at an altitude ranging from 230 to 250 metres. They grow on deep clay-limestone soils dotted with limestone oolites, which give the wine its distinctive structure. The estate cultivates these parcels with great care, applying certified High Environmental Value methods and favouring fully manual harvesting to preserve the integrity of the fruit.
Vinification and ageing
Upon arrival in the cellar, the whole clusters intended for this Chassagne-Montrachet 1er cru "Abbaye de Morgeot" Domaine 2025 are gently pressed using a pneumatic press. The juices then undergo a one-day static settling before beginning a double fermentation in oak barrels. Ageing continues for 17 to 18 months, including a few months in stainless steel tanks to refine the wine, with a carefully adjusted proportion of new barrels, generally between 10 and 25%.
