Tasting
Nose
Immediately striking in its aromatic purity, the bouquet is particularly floral and vibrant. It releases intense citrus aromas of lemon, lime and grapefruit, mingled with notes of white-fleshed fruit such as peach and pear. Subtle herbaceous hints of boxwood and freshly cut grass blend with a very distinctive chalky minerality.
Palate
Lively, deep and complex, this wine unfolds an elegant, finely chiselled structure. The acidity, although pronounced, is seamlessly integrated into a generous, fruity mid-palate. A chalky mineral backbone brings tension and precision, leading to a long, mouth-watering finish reminiscent of citrus and wet stone.
Food and wine pairings
This cuvée is an ideal match for seafood, such as raw or cooked shellfish, oysters, and tartares and carpaccios of white fish or salmon. It also pairs beautifully with goat's cheeses such as Crottin de Chavignol, vegetable dishes featuring asparagus or herb salads, and even richer fare such as poultry in a creamy morel sauce or fine crustaceans.
Serving and cellaring
To fully appreciate this 2025 vintage, it is best served at a temperature of 10°C. Blessed with excellent ageing potential, this wine can be enjoyed until around 2035.

The estate
Founded in 1987, the house of Pascal Jolivet quickly established itself as a leading benchmark in the Loire Valley. Still run today by its founder and namesake, Pascal Jolivet, the estate farms 120 hectares spread across Sancerre and Pouilly-Fumé, as well as 60 hectares in Touraine. A renowned Sauvignon Blanc specialist, the estate stands out for its rigorous plot-by-plot approach and its natural winemaking philosophy. By combining respect for the environment with technical precision, the house produces wines of great aromatic purity that remain true to their terroirs of origin.
The vineyard
Sourced from a selection of the estate's plots, this emblematic cuvée comes from the village of Bué, in the heart of the Sancerre appellation. The organically farmed vines, planted on south-facing slopes, thrive on shallow, hard and very stony soils. These 100% limestone soils, dating from the Kimmeridgian age, are known locally as "Les Caillottes". To preserve the quality of the berries, the grapes are harvested by hand and then meticulously sorted as soon as they reach the winery.
Winemaking and ageing
The winemaking process relies on gravity in order to respect the natural cycle of vinification. After a gentle pressing, only the free-run juice and the heart of the pressing are retained. Fermentation takes place entirely naturally, driven by indigenous yeasts, in temperature-controlled stainless steel tanks. Finally, the wine is aged for 8 months on fine lees in the same tanks, preserving its fruit and minerality without any oak influence.
