The nose kicks off with flowers, red berries, mint, tobacco, cocoa, and herbs. The palate is even better with its vivid display of red with black pit fruits, licorice, dark chocolate, and herbs, with a blend of creaminess and vibrancy on the backend. Give it just a year or two in the bottle, and it will really come on strong. The wine blends 80% Merlot with 20% Cabernet Sauvignon. Drink from 2029-2045. 92-94 Pts

Salinity and signature roasted plum fruits, estate signature, a ton of sinew, coffee, espresso, olive pit, great stuff. 100% new oak, September 16 to 18.

Vinum

Intense bouquet, with a chalky character, violet, strawberry, cherry jam, herbal spice; a juicy palate, concentrated yet elegant, pronounced oak-barrel notes, superb tannins, taut acidity, excellent length, a dark-fruited finish with hazelnut and mocha notes. A Roc de Cambes that should age magnificently.

Description

Tasting notes and characteristics of Roc de Cambes 2025

Tasting

Appearance

The wine displays a deep red hue with garnet and purple highlights.

Nose

Remarkably forthright, the nose opens on a rich and complex aromatic bouquet, combining aromas of black fruits (blackcurrant, cherry, plum, blackberry) with floral notes of iris and peony. With aeration, delicate touches of spices, dark chocolate, liquorice and cigar box are revealed, enhanced by nuances of leather, fresh mint and pepper.

Palate

The attack is silky and generous, leading into a palate that is both ample and concentrated. Supported by a measured acidity that lends it a lovely liveliness, the wine rests on fine, elegant tannins. The finish, of remarkable persistence, stretches out on subtle chalky notes.

Food and wine pairings

This red wine pairs perfectly with roasted or grilled meats such as beef, lamb, veal or duck. It also goes wonderfully with mushroom-sauce preparations, meaty fish like tuna, lightly spiced Asian dishes, as well as platters of charcuterie and well-aged cheeses.

Serving and cellaring

For tasting in the best conditions, it is recommended to serve Roc de Cambes at a temperature of between 15.5 and 17°C. In its youth, decanting for around two hours is advised to allow its full complexity to express itself. This cellaring wine will be enjoyable from 2026 and will continue to evolve harmoniously until around 2045.

The richness and precision of a red wine from the Côtes de Bourg

The estate

Acquired in 1988 by François Mitjavile and his wife, Château Roc de Cambes is an estate steeped in history whose roots go back to the 18th century, notably housing a cellar dating from the 14th century. Located in the Bordeaux region, this property has been raised to the pinnacle of its appellation thanks to a rigorous viticultural approach, placing concentration and ripeness at the heart of its ambitions. Today, François Mitjavile, supported by his daughter Nina, continues to oversee the estate. Together, they perpetuate an artisanal expertise and a singular vision that underpin the international reputation of their wines.

The vineyard

Planted on the Croûtes hillsides, an essential terroir of the Côtes de Bourg appellation, the vineyard extends over 12 hectares. The vines, ranging in age from 30 to 70 years, are arranged in an amphitheatre on clay-limestone soils enjoying a full southern and south-western exposure. The proximity of the Gironde estuary provides a protective microclimate that regulates temperatures throughout the season. The estate relies on sustainable viticulture, with permanent grass cover and Royat cordon pruning, naturally encouraging the concentration of the grapes.

Winemaking and ageing

The harvest is carried out entirely by hand, followed by a meticulous sorting of the berries. Vinification takes place traditionally in concrete vats, while malolactic fermentation occurs spontaneously in French oak barrels. The ageing of Roc de Cambes 2022 lasts 24 months, exclusively in new barrels, with careful homogenisation at each racking.

Grape varieties

Merlot, Cabernet Sauvignon and Malbec.
