Tasting
Appearance
The wine reveals a brilliant pale gold hue, enhanced by delicate green reflections characteristic of its youth.
Nose
Highly complex, the nose releases marine aromas of iodine and salt, intertwined with fresh fruit notes of ripe lemon, grapefruit and peach. Subtle floral hints of acacia blend with mineral touches of gunflint and fresh almond.
Palate
The attack is clean, carried by beautiful tension and lively acidity. The mid-palate reveals a perfect balance between the generosity of the fruit and an assertive chalky minerality. The remarkably long finish unfolds on saline notes, wet stone and a fine bitterness typical of its terroir.
Food and wine pairings
This white wine from France pairs wonderfully with a seafood platter, fresh oysters or scallops. It also enhances grilled fish, as well as white meats served with a creamy mushroom sauce.
Serving and cellaring
To fully appreciate this Chablis 1er Cru "Mont de Milieu" 2023, it is recommended to serve it at a temperature between 10 and 12°C, taking care to open it around 30 to 45 minutes before tasting. This wine can be enjoyed now, but will continue to develop in the cellar until around 2031.

The estate
Founded in 1840 by Jean Febvre, the Simonnet-Febvre House is a historic institution of Chablis, in Burgundy. Acquired in 2003 by the renowned Maison Louis Latour, it has preserved its unique identity and independence. Today led by Paul Espitalié, the estate stands out for its commitment to the authentic and pure expression of its limestone terroirs. The domain also distinguishes itself through its sustainable practices and the revival of ancient grape varieties, confirming its essential status in the region.
The vineyard
This Chablis wine comes from the prestigious Mont de Milieu climat, spreading over approximately 44 hectares on the right bank of the Serein. Benefiting from an exceptional south-south-east exposure and bathed in sunshine, this terroir lies on a homogeneous Kimmeridgian subsoil, rich in clay, white limestone and marine fossils. The vines, averaging around forty years of age, draw from it all the complexity and salinity that shape the unique character of this appellation.
The vintage
The 2023 vintage stands out for its generous and abundant production, offering grapes of fine quality that made it possible to craft wines that are both accessible and true to the identity of their terroir.
Winemaking and aging
The creation of the Chablis 1er Cru "Mont de Milieu" 2023 is based on rigorous winemaking. After carefully managed harvests, fermentation takes place in stainless steel tanks under controlled temperatures between 18 and 20°C, thereby preserving all the aromatic freshness. The wine then benefits from a meticulous aging on fine lees for 12 months, encouraging the pure expression of minerality without the influence of oak.
