Description
Tasting Notes and Recommendations for the Years in Cask 24 Year Old Fins Bois 1988 by Bache-Gabrielsen
Tasting
Appearance
A natural hue, with no added colouring. Its lively, limpid colour reflects its long years of ageing in Limousin oak casks, refined by an extended rest in demijohns.
Nose
Highly aromatic and deep, it reveals a delectable dominance of Madagascan vanilla and nougat. This profile is elegantly enriched with tertiary notes of burnished leather, accompanied by subtle floral and herbal inflections reminiscent of herbal tea.
Palate
Smooth, rich and enveloping. It expresses fruity notes of currants and the delicacy of linden blossom, all carried by an intense vanilla character. The balance is remarkable, offering great drinkability and a silky texture that unfolds at length.
Food Pairings and Tasting Moments
The House recommends savouring this exceptional spirit as a digestif, served at an optimal temperature of 25°C. To accompany its indulgent character, it will pair wonderfully with lightly sweetened desserts based on dried fruits, milk chocolate, or a light pastry such as an almond financier. Lovers of contrast may also pair it with small touches of blue-veined cheese to enhance its floral and leather aromas.
Mixology
As this is a product of great rarity and exceptional maturity, it is strongly recommended to enjoy it neat, without any additions, in order to fully appreciate the complexity of its aromatic palette.
A Cognac of Great Elegance from Bache-Gabrielsen, Rooted in the Fins Bois Terroir
Bache-Gabrielsen: The Franco-Norwegian Alliance at the Heart of Cognac
Founded in 1905 by the Norwegian Thomas Bache-Gabrielsen, the eponymous House embodies a unique alliance between Nordic culture and Charentais craftsmanship. Based in Cognac, this family-owned estate in France stands out for its exploratory approach and constant quest for new sensory experiences centred on Cognac. Now led by Hervé as CEO, under the supervision of Christian, Chairman of the Board, Bache-Gabrielsen carries on its heritage while embracing modernity. The House is strongly committed to the environment, aiming for a 17% reduction in its CO₂ emissions by 2027. Its production philosophy champions transparency, the use of Limousin oak casks, and the extended resting of its oldest eaux-de-vie in demijohns within its treasured "Paradis".
The 1988 Vintage: The Pure Expression of the Brie-sous-Matha Terroir
Distilled under the expertise of master distiller Robert Briand, this Cognac benefited from a maturation process of great precision. It first aged for 24 years in Limousin oak casks, developing its structure and aromatic richness, before resting a further 9 years in a demijohn to perfect its harmony.
Bottled in 2013 in a 70cl format, this exceptional Years in Cask 24 Year Old Fins Bois 1988 spirit is presented in an elegant white case or a "Tradition" gift box, embodying the range's philosophy of transparency, proudly showcasing its age, its plot of origin and its natural colour.
