Tasting

Color
An amber honey colour with pronounced golden hues. The spirit reveals exceptional viscosity and legs, testifying to the richness and smoothness characteristic of the distillery.

Nose
The aromatic profile opens with dried fruits (dates, raisins, figs and apricots) highlighting the influence of the sherry cask. It evolves towards candied citrus peel and orange marmalade on toasted bread, with underlying notes of dark chocolate and leather. Warming spices (ginger, nutmeg, cinnamon, clove) and vanilla blend with subtle floral touches reminiscent of heather.

Palate
The palate opens with a surprising warmth featuring pronounced notes of cinnamon and woody spices. The mid-palate reveals dark fruits (stewed plums, prunes, dark berries) balanced by caramelised honey, dark chocolate and subtle touches of espresso. Vanilla, caramel and candied orange peel bring a lovely brightness. The finish is remarkably long and warming, dominated by ginger, caramel and a subtle, drying tannic structure, leaving lingering notes of black pepper, leather and tobacco.

Food and Wine Pairing

This exceptional spirit is best enjoyed neat, inviting a slow, contemplative appreciation. It pairs magnificently with dark chocolate desserts (over 70% cocoa), a crème brûlée, or dried fruit pastries such as tarte Tatin or sticky toffee pudding. On the savoury side, it beautifully complements roast duck with citrus, matured beef (sirloin steak, Wagyu), game (venison, pheasant) or slow-cooked dishes with warm spices such as a cinnamon-spiced tagine.

Mixology

While it is best savoured without embellishment, its complexity lends itself to sophisticated creations: a refined Whisky Sour (fresh lemon juice, honey syrup, a touch of egg white), a Hot Toddy revisited with quality hot chocolate, or a variation on the Presbyterian (equal parts ginger ale and soda water over ice). It can also replace the rye in a sophisticated take on the Sazerac.

Other Characteristics

Bottled at 43% ABV, this whisky boasts an entirely natural colour, derived exclusively from its interaction with the oak casks, with no added caramel.

Founded in 1824 by Alexander Reid in Craigellachie, in the Speyside region, Macallan is a historic institution of Scotch whisky from Scotland. The Double Cask 18 Years Old Annual Release 2023 is an exceptional Single Malt that showcases the distillery's technical mastery. The making of this whisky begins with a rigorous selection of barley, including around 25% of the costly Golden Promise variety, known for imparting a rich, creamy texture to the distillate, complemented by modern varieties. The long and complex fermentation uses several yeast strains, followed by a distillation in which only 17% of the heart of the run (the "finest cut") is retained to guarantee absolute purity.

The "Double Cask" designation highlights eighteen years of ageing in two distinct types of casks: American oak and European oak. Unlike other ranges, these casks are exclusively seasoned with dry Oloroso sherry in Spain, with no use of ex-bourbon casks whatsoever. The fine-grained European oak imparts notes of spice and structure, while the larger American oak delivers aromas of vanilla and citrus. This meticulous blend offers a contemporary, well-balanced expression, bottled at 43% for optimal flavour intensity.
