Tasting
Appearance
A hue adorned with shades ranging from deep old gold to profound amber, enhanced by delicate coppery highlights, typical of long and patient ageing in sherry casks.
Nose
A deep, rich and evolving bouquet. Indulgent aromas of stewed fruits and apple intertwine harmoniously with notes of toasted nuts and subtle chocolate. With a little aeration, subtle hints of honeycomb and dried apricot reveal themselves with great elegance.
Palate
The attack opens on lovely spicy notes before giving way to a fruity roundness marked by blackberry, raspberry and apple. Flavours of milk chocolate and mandarin unfold over a particularly silky texture, supported by perfectly polished oak. The medium-length finish offers a beautifully controlled and fresh conclusion on notes of menthol and cocoa.
Pairings and tasting moments
Ideal at the end of a meal or during a dedicated moment of contemplation, this single malt pairs wonderfully with dark or milk chocolate desserts, lightly sweetened dried fruit tarts, or hard and blue cheeses. It is best enjoyed neat, at room temperature, in a tulip-shaped or Glencairn glass. One or two drops of water may be added sparingly to open up the bouquet, but the use of ice cubes should be avoided so as not to freeze its aromas.
Mixology
As this is an exceptional and extremely rare product, we strongly recommend enjoying it neat, without embellishment. It is best not to use it in cocktails, in order to fully appreciate the aromatic complexity shaped by three decades of maturation.
