Tasting
Color
An amber hue, enhanced with ruby highlights over a dark background.
Nose
Elegant and expressive, it reveals aromas of dried fruits, honey, and freshly cut hay. These are interwoven with notes of dried fig, peach, vanilla, and nutmeg, enriched by deep scents of Sherry wine, leather, fine tobacco, and fruitwood. A light peaty and malty touch rounds out this complex bouquet.
Palate
The palate opens softly, sweet and velvety, unveiling indulgent flavors of gingerbread and golden caramel, underpinned by a light oakiness. The palate reveals itself to be rich and powerful, offering nuances of walnut, hazelnut, raisins, date, and red fruit paste, evolving toward juicy plum. A touch of licorice and menthol brings balance to the whole, while a rich smokiness and perfectly controlled peat enhance its roundness. The finish is extremely long and complex, lingering on notes of peat, caramel, and spice.
Food and Wine Pairing
Best enjoyed at room temperature or chilled, ideally in a tulip-shaped glass. It is highly recommended to let the spirit rest in the glass for at least 15 to 30 minutes before tasting, to allow it to fully open up. Perfect as a digestif, at the end of a meal, or during a contemplative late-afternoon tasting, it pairs wonderfully with quality dark chocolate, aged Comté, foie gras, smoked salmon, or dried fruits. It is also an excellent companion for a premium cigar.
Mixology
As an exceptional spirit of great complexity, it is best enjoyed neat, without embellishment, to fully appreciate its aromatic richness. A few drops of cold water may be added if the alcohol level is perceived as too intense.
Other Characteristics
This spirit is a peated blended malt, in which the peat is delicate, very well controlled, and never dominant, acting as an enhancer of balance. Its natural alcohol strength has been very slightly reduced to reach 45%.

The Michel Couvreur House: The Art of Maturation
Founded by Belgian-born Michel Couvreur, the eponymous house is built on a revolutionary philosophy established as early as the 1970s: that aging in wooden casks determines 90% of a spirit's final quality. Although this is a Scotch Whisky (Highlands) distilled in the United Kingdom, the soul of the production lies in Bouze-lès-Beaune, in Burgundy. It is there, in an exceptional 150-meter cellar carved directly into the rock, that the spirits mature in rare old Sherry casks. Since the founder's passing in 2013, the continuity and excellence of the Michel Couvreur house have been ensured by its current owners, Cyril Deschamps, co-director, and Jean-Arnaud Frantzen, cellar master. Together, they carry on this obsessive quest for artisanal quality, guided by the family motto "Virtute et Opera".
The Masterful Blend of the Special Vatting
The Special Vatting is a perfect illustration of mastery in blending and aging. This Whisky is a peated Vatted Malt (or blended malt), composed of a meticulous blend of three single malts aged over 12 years. The composition combines a highly mature and concentrated first distillate, aged in oloroso casks for 12 to 27 years, a younger second one, iodine-tinged and peated, bringing freshness, and a third, fine and subtle, which ensures the coherence of the whole.
The aging of this spirit takes place entirely in Burgundy, within the house's humid cellars. It rests in three distinct types of Sherry casks: Pedro Ximénez, Oloroso, and Amontillado. This diversity of vessels, rigorously sourced for their quality and historic seasoning, gives the product a remarkable harmony between the spicy depth of the wood and the salinity of the distillate.
True to the house's artisanal approach, each bottle receives special care, including hand-corking, hand-waxing, and hand-labeling. The exact composition may vary slightly from one edition to another depending on available casks, reflecting a non-standardized production that favors authentic expression.
