Characteristics and tasting tips for the Old & Rare American Oak Ex-Bourbon (HH0310) by Sullivans Cove
Tasting
Nose
Raspberry, coconut, salted caramel, mango sorbet, marshmallows, banana smoothie and tapioca pudding are among the many aromas in this broad, expressive nose.
Palate
Seductive in texture and richness, the palate reveals notes of citrus (orange, grapefruit), fresh mint, icing sugar, liquorice, nutmeg and rosemary. As the tasting unfolds, the broad, powerful oak framework, while retaining a lovely vibrancy, stretches into a finish with lingering notes of musky vanilla, banana, custard, caramel, nutmeg and raspberry jam.
An exceptional Tasmanian single malt aged 18 years in an ex-bourbon cask
Sullivans Cove, the pinnacle of Australian whisky
Founded in 1994, Sullivans Cove is an Australian whisky distillery located in Hobart, Tasmania. After a difficult period, it was bought in 2003 by a group of investors led by Patrick Maguire, then acquired in 2016 by Adam Sable, who remains its owner and principal shareholder. Its crowning achievement came in 2014, when its French Oak Cask was named World's Best Single Malt at the World Whiskies Awards, firmly establishing Tasmanian whisky on the international stage. Under the leadership of CEO Andy Gaunt and master distiller Heather Tillott, Sullivans Cove has become the most awarded Australian whisky brand.
Old & Rare American Oak Ex-Bourbon HH0310: the most awarded Australian single cask
This single cask was filled on 19 May 2000 and bottled on 4 December 2018, after a maturation of 18 years and 7 months. The most decorated expression from Sullivans Cove and the most awarded Australian single cask whisky of all time, it was named World's Best Single Cask Single Malt at the 2018 World Whiskies Awards.
The 200-litre ex-bourbon American oak cask yielded an extremely limited number of bottles. Each bottle is presented in a unique, handcrafted solid wood box and accompanied by a certificate of authenticity hand-signed by master distiller Heather Tillott. A true piece of Australian whisky history, this bottling is one of the oldest Australian single malt whiskies ever released. This unpeated Australian whisky, bottled at 48%, offers rare complexity and length on the palate. It stands out for its richness, powerful oak and exceptional texture, while retaining the brilliance and distinctive character of Sullivans Cove.
