Tasting
Colour
The wine shows a deep, luminous and brilliant ruby hue.
Nose
The bouquet opens with a beautiful expression of red and black fruits, evoking fresh cherry, raspberry and blackberry. Delicate floral touches of peony and violet intertwine with subtle spicy nuances and gentle liquorice.
Palate
This red Bourgogne offers a silky, caressing texture. The supple body reveals precise fruit, supported by fine tannins and a pleasant mineral freshness. The finish lingers for a long time with savoury, fruity notes.
Food and Wine Pairings
This cuvée is a wonderful match for traditional slow-cooked dishes such as beef bourguignon or coq au vin. It also pairs very well with roast poultry, white meats in a light sauce, and soft-rind cheeses such as Reblochon or Brie.
Serving and Cellaring
For optimal enjoyment, we recommend serving the Bourgogne "Les Grands Chaillots" 2023 at a temperature between 14 and 16 °C, decanting it briefly for around twenty minutes while it is young. This wine can be enjoyed now, but it will continue to gain complexity in the cellar until around 2031.
The Finesse and Depth of a Bourgogne Wine
The Estate
The family's winemaking history began in 1720, but it was in 2001 that Thibault Liger-Belair founded the current estate in Nuits-Saint-Georges. At the head of this property of around eight hectares in the Côte de Nuits, the winemaker farms his vines according to the principles of organic and biodynamic viticulture. Renowned for his approach that respects all living things and for his minimal-intervention winemaking, the estate produces authentic Bourgogne wines with great purity of fruit and a faithful expression of their respective terroirs.
The Vineyard
The grapes for this Bourgogne cuvée come from two prestigious communes. One hectare is located in Nuits-Saint-Georges, with vines planted between 1978 and 1986, while two hectares lie in Chambolle-Musigny, home to vines dating from 1954 to 1962. These old vines thrive on clay-silt soils resting on a limestone substrate, and are carefully tended, notably with horse ploughing, in order to preserve the vitality of the soil.
The Vintage
The 2023 vintage stands out for its particularly favourable weather conditions in the region. This growing cycle allowed the grapes to reach optimal ripeness while retaining lovely vivacity, resulting in a generous, healthy and perfectly balanced harvest.
Winemaking and Ageing
After rigorous hand harvesting, the Bourgogne "Les Grands Chaillots" 2023 is 80% destemmed, thus retaining 20% whole bunches. Fermentations start with indigenous yeasts, followed by gentle extraction over around three weeks. The wine is then aged on its lees for fifteen months in oak barrels, of which a quarter are new. Bottling is carried out without any fining or filtration.
