Tasting notes
Appearance
This wine reveals an intense cherry-red to ruby colour, with lovely brilliance and a dark, almost black core.
Nose
Remarkably complex, the bouquet releases deep aromas of ripe red and black fruits, intertwined with delicate floral notes of violet. The whole is enhanced by touches of spice, balsamic and mineral notes, along with subtle oak.
Palate
The attack is ample and generous, opening onto a structured palate with remarkable freshness. The tannins are elegant and perfectly integrated, leading to a long, persistent finish where fruity and spicy flavours intermingle.
Food and wine pairings
This red wine pairs wonderfully with meats of character such as rack of lamb, pepper steak or game dishes. It also goes very well with spicy Mediterranean cuisine, hard cheeses or a dark chocolate dessert.
Serving and cellaring
For optimal enjoyment, we recommend serving this 2024 vintage at a temperature between 15 and 18°C. With its fine structure, this wine has excellent ageing potential and can evolve in the cellar for more than a decade.
The Elegance and Power of a Mountain Wine from the DOP Pago de Vallegarcía
The estate
Born from the vision of Alfonso Cortina, the Vallegarcía winemaking project began with its first plantings in 1999 in Retuerta del Bullaque, in the heart of the Montes de Toledo in Castilla-La Mancha. This pioneering estate now extends over 50 hectares and benefits from its own protected appellation. Since the founder's passing, the estate has been run by his sons, Felipe and Carlos Cortina Lapique. Guided by oenologist Adolfo Hornos, they continue to craft mountain wines of great elegance, true to the unique identity of this high-altitude terroir.
The vineyard
Perched at an altitude of 850 metres, the vineyard lies within a continental climate marked by strong temperature contrasts. The vines are rooted in poor, very ancient soils composed of schist and quartzite, which encourage moderate yields. Conventionally farmed, this singular terroir, formerly associated with the Vino de la Tierra de Castilla appellation before obtaining its own pago status, allows for slow, optimal ripening of the grapes, which are harvested exclusively by hand.
Vinification and ageing
After a rigorous selection of the bunches, vinification begins with a cold pre-fermentation maceration of approximately 72 hours at 10°C. This is followed by fermentation and maceration lasting around twenty days, punctuated by frequent pump-overs for gentle extraction. Finally, the wine undergoes a meticulous ageing of around twelve months in new French oak barrels, followed by a period of bottle rest.
