The estate
Founded in 1959 by William Fèvre, the eponymous estate has established itself as an essential reference in Burgundy. Located in the heart of the appellation, the property looks after a vineyard of approximately 70 hectares and stands out as the largest owner of Grands Crus in Chablis. A pioneer of sustainable viticulture, the estate is HVE3 certified and farms its vines organically and biodynamically. Since January 2024, Domaines Barons de Rothschild Lafite has been the current owner of this jewel, perpetuating a philosophy centred on precision, purity and absolute respect for the terroir.
The vineyard
The "Les Lys" climat is a historic micro-plot of 0.99 hectares nestled within the Vaillons combe, on the left bank of the Serein. This exceptional terroir of the Chablis appellation lies on a clay-rich slope with a Kimmeridgian subsoil abundant in marls, clay-limestone and marine fossils. Sheltered by forest cover, the vines benefit from a cool microclimate that encourages slow ripening of the grapes. The entire plot is farmed according to the principles of organic and biodynamic agriculture, fostering rich biodiversity.
Vinification and ageing
The production of the Chablis 1er cru "Les Lys" Domaine 2024 begins with hand harvesting followed by gravity-fed transfer. The grapes undergo a gentle, short pneumatic pressing to extract the juice with the utmost delicacy. Alcoholic and malolactic fermentations start spontaneously in stainless steel tanks. Ageing lasts a total of 18 months. Initially, around 30% of the cuvée rests on fine lees in neutral French oak barrels for five to six months, while the remainder stays in tank. The final blend then continues its maturation in small stainless steel tanks.
