Decanter

Green apple and passion fruit aromas with notes of oyster shell and smoky reduction; there's a compelling purity to the aromas and surprising Chablis typicity, despite the hot conditions of the vintage. As one might imagine, this is a substantial wine, yet there's still enough tension on the palate to bring everything into balance. The grapes are from eight domaine-owned parcels totalling 3.63ha of the 16.26ha of plantings in Vaulorent registered in 2023. Organic.

The 2022 Chablis Vaulorent 1er Cru offers lilting orchard fruit, pressed flower and honeysuckle scents on the nose that gain intensity in the glass. Plenty of vigour here. The palate is very well balanced with a keen line of acidity. There is an underlying minéralité that comes through, tensile and energetic, with a precise and saline finish. Another great Chablis Fourchaume. Bottled under Diam 10. Tasted blind at the annual Burgfest tasting.

It is built on concentrated fruit with a strong saline grip, a very pure wine, yet the flesh of the vintage is well expressed. Lovely finish with bitters reminiscent of lemon zest.

Aromas of underripe Anjou pear, citrus oil, delicate acacia blossom, and a fine veil of saline minerality evoke a restrained, elegant expression of Chablis. On the palate, bright acidity and chalky minerality frame subtle layers of orchard fruit and honeysuckle, tapering into a quiet, sea-kissed finish. This is effortlessly enjoyable now but has so much yet to unveil. Hold through 2030.

There are some 7,000 bottles of the 2022 Chablis 1er Cru Vaulorent, a cuvée where Didier Séguier permits himself the luxury of using only Fèvre's best old-vine parcels and which is always one of the high points of the range. Wafting from the glass with notes of citrus oil, oyster liquor, white flowers and hazelnuts, it's medium to full-bodied, satiny and pure, with excellent concentration, racy acids and a long, saline finish.

Tasting

Colour
With beautiful crystalline clarity, this white wine from France reveals a pale gold hue, subtly enhanced with golden or greenish highlights.

Nose
The bouquet opens with great freshness, dominated by citrus aromas such as lemon and lime zest, accompanied by green apple and mineral touches evoking chalk or flint. With aeration, notes of exotic fruits, pineapple and delicate almond blossom touches emerge.

Palate
The attack offers remarkable liveliness, carried by a saline minerality and a lovely lemony acidity. The mid-palate displays an elegant texture and fine concentration, without heaviness, leading to a persistent and intensely saline finish.

Food and wine pairing

This wine pairs wonderfully with oysters, shellfish or grilled fish. It also goes very well with white meats such as roast poultry, veal in cream sauce, as well as soft-rind cheeses or an aged Comté. Delicate vegetables such as asparagus with beurre blanc will also enhance this cuvée beautifully.

Service and storage

To fully appreciate this Chablis 1er Cru "Vaulorent" Domaine 2022, it is recommended to serve it at a temperature between 8 and 10°C. This wine has excellent aging potential and can be enjoyed until around 2037.

The elegance and minerality of a great white wine from Chablis

The estate

While the family has been present in the region for more than two and a half centuries, the William Fèvre estate was officially founded in 1959 with just seven hectares. Located in Burgundy, this illustrious estate has become an essential reference, renowned for its extensive heritage of grands crus and its pioneering environmental commitment. Since January 2024, the estate has belonged to Domaines Barons de Rothschild Lafite. Still led by Didier Séguier, the house continues to uphold a philosophy centered on the pure expression of terroir and respect for biodiversity.

The vineyard

This Chablis wine comes from a 3.63-hectare plot located on the right bank of the Serein, in the extension of the Les Preuses grand cru. Facing south-east, the vines, with an average age of twenty-five years, thrive on hillsides with clay-limestone Kimmeridgian soils. The lower parts are rich in clay, while the higher elevations stand out for their high proportion of limestone and rock. The estate applies sustainable viticultural practices, including regular ploughing and hand-harvesting.

The vintage

The year 2022 benefited from very favourable weather conditions. After a mild spring, the summer proved warm, punctuated by cool nights, with moderate rainfall. These conditions allowed for optimal ripening of the berries while preserving lovely acidity, resulting in an early autumn harvest.

Winemaking and aging

After gentle pneumatic pressing and cold static settling, the fermentation of this Chablis 1er Cru "Vaulorent" Domaine 2022 takes place on a plot-by-plot basis. About 30% of the must ferments in used oak barrels at room temperature, while the remaining 70% is vinified in stainless steel tanks under controlled temperature. After complete malolactic fermentation, aging on fine lees lasts 12 to 14 months, separately, before the final blend.
