Characteristics and Tasting Tips for the Chablis Grand Cru "Les Clos" Domaine 2024 by William Fèvre
Tasting
Appearance
This wine reveals a beautiful pale white colour.
Nose
The nose is expressive and complex, releasing aromas of white fruit and citrus. It also opens onto delicate floral notes and soft spices, enhanced by a pronounced minerality reminiscent of chalk, flint and oyster shell.
Palate
On the palate, this wine combines power and elegance through a firm, chiselled structure. It stands out for its remarkable saline tension and chalky texture, delivering a beautiful concentration of white fruit that stretches into a long, deeply mineral finish.

The estate
Founded in 1959 by William Fèvre, the eponymous estate is an emblematic figure of Burgundy, located in the heart of the Chablis appellation. With a vineyard of around 70 hectares, it is the largest owner of Grand Cru classified parcels in the region. A pioneer of responsible viticulture, the estate has been HVE3 certified since 2014. Since January 2024, the property has been owned by Domaines Barons de Rothschild Lafite, who continue the estate's pursuit of excellence and its environmental commitment through wines of great purity.
The vineyard
This Chablis Grand Cru comes from vines more than 70 years old, some of which were planted in the 1940s. The parcels are located on the right bank of the Serein, at the top of the slope, with a south to south-east exposure. The terroir rests on shallow soils, rich in Kimmeridgian limestone and marine fossils, which encourage deep rooting. The vineyard is farmed organically, without irrigation, with the utmost respect for local biodiversity.
The vintage
The 2024 vintage was marked by particularly demanding weather conditions, including episodes of spring frost that considerably reduced yields. Despite these hazards and a very small harvest in terms of volume, the rigorous work carried out in the vineyard produced grapes of exceptional quality, offering a classic profile and beautiful freshness.
Vinification and ageing
The grapes are harvested by hand, followed by rigorous sorting in the vineyard and at the winery. To craft this Chablis Grand Cru "Les Clos" Domaine 2024, vinification and ageing take place over a period of 10 to 15 months. The wine rests on fine lees, using a combination of small stainless steel tanks and used oak barrels, with no new oak whatsoever, in order to preserve all the purity and mineral expression of the terroir.
Grape variety
This wine is made exclusively from Chardonnay (100%).
