Sourced from an east-facing slope that yields one of the racier and more ethereal wines in the range, the 2023 Chablis Grand Cru Les Preuses opens with aromas of oyster liquor, orange peel, white flowers and lemon oil. Medium- to full-bodied, taut and tensile, it is nakedly chalky, incisive and searingly saline. The site is so steep that special cable equipment is employed for its cultivation.

Tasting

Colour
The colour reveals a pale gold hue enhanced by subtle green highlights.

Nose
Remarkably precise, the nose exudes citrus aromas (lemon, lime, grapefruit) and white flowers such as acacia. It then opens onto mineral notes, iodine, hazelnut and dried fruit, evoking the marine origins of the terroir.

Palate
The palate offers a full and concentrated texture, supported by a refreshing acidity. The chalky minerality is very present, guiding the tasting towards a long, complex and perfectly balanced finish.

Food and wine pairing

This white wine pairs ideally with seafood, particularly oysters, or white-fleshed fish such as turbot or sea bass. It also goes wonderfully with shellfish in a light cream sauce, delicate white meats (poultry, veal), as well as matured goat cheeses.

Service and storage

For optimal tasting, it is recommended to serve this wine between 12 and 14°C. This Chablis Grand Cru "Les Preuses" Domaine 2023 can be enjoyed from 2026 and will continue to evolve in the cellar, drinking well until around 2035.

The estate

Founded in France in 1959 by William Fèvre with just seven hectares of vines, the estate has become an essential reference in Burgundy. Now overseeing an extensive vineyard, it owns the largest area of Grand Cru-classified plots in the appellation. A pioneer in environmental practices, the estate has been managed by Didier Séguier since 1998. In January 2024, the domaine was acquired by Domaines Barons de Rothschild Lafite, who continue to uphold this philosophy centred on respect for the terroir and sustainable winegrowing.

The vineyard

The Les Preuses climat is located on the right bank of the Serein, benefiting from steep slopes and excellent south and southwest exposure. This Chablis terroir rests on shallow Kimmeridgian soils, composed of brown and white clay-limestone marls rich in marine fossils. The vines undergo meticulous soil management, and the grapes are harvested by hand in small crates to preserve the integrity of the bunches.

The vintage

The year began with a mild winter followed by budbreak within seasonal averages. The mild spring encouraged rapid vine growth and flowering in early June. The summer proved particularly dry. However, ideal hot and dry conditions just before harvest allowed the grapes to reach exceptional ripeness while retaining good acidity.

Winemaking and aging

After gentle pneumatic pressing and cold settling, the fermentation of this Chablis Grand Cru "Les Preuses" Domaine 2023 takes place partly in fine-grained French oak barrels and partly in stainless steel tanks. Aging extends over several months, resting in oak barrels and tanks on fine lees.
