A Chablis with classic minerality
The estate
Founded in 1959 by William Fèvre, the William Fèvre estate is now one of the leading producers in Chablis, with 70 hectares of vines. Since 1998, the estate was managed by Didier Séguier under the ownership of the Henriot family, before being acquired in January 2024 by Domaines Barons de Rothschild Lafite. The estate stands out for its environmental commitment, with full organic certification obtained in 2023 and the application of biodynamic practices on its Grand Cru and Premier Cru parcels since 2010. With nearly four centuries of family presence in Chablis viticulture, William Fèvre embodies excellence and respect for the Burgundian terroir.
The vineyard
The Chablis vineyard benefits from a unique geographic position in northern Burgundy, characterized by a cool climate that is well suited to producing white wines of great freshness. The Kimmeridgian soils, made up of limestone and marl dating back to the Jurassic era, contain countless marine fossils that give the wines the saline minerality so characteristic of the appellation. These exceptional geological formations, 140 to 160 million years old, form the foundation of the identity of Chablis wines.
The vintage
The 2020 vintage was shaped by particularly favorable climatic conditions in Chablis. The early start to the growing cycle made it possible to begin harvesting at the end of August, earlier than usual. Cool temperatures during ripening helped preserve naturally high acidity while allowing the grapes to ripen gradually. The exceptionally healthy condition of the crop offered winegrowers ideal conditions to express the purity of the terroir.
Vinification and aging
The vinification of William Fèvre’s 2020 Chablis favors a minimalist approach aimed at preserving the authentic expression of the terroir. Winemaking practices respect the estate’s non-intervention philosophy, allowing the natural characteristics of the grapes and the vintage to fully express themselves in the finished wine.
