Tasting

Nose
The bouquet unfolds with beautiful intensity, revealing aromas of red and black fruits such as blackberry, cherry and raspberry. Over time, this palette becomes enriched with notes of sweet spices, cocoa and tea.

Palate
The texture is fleshy and rests on a tannic structure that is both supple and velvety. The finish lingers at length on intensely fruity aromas.

Food and wine pairing

This red wine will ideally accompany roasted or sauced meats, such as duck, beef, pork or game. It also pairs wonderfully with medium to strong-flavoured cheeses. For a perfect match, opt for a beef tenderloin in a spice crust.

Serving and cellaring

To fully appreciate the Aloxe-Corton 1er Cru "Clos des Maréchaudes" Domaine du Pavillon 2024, it is recommended to serve it at a temperature between 16 and 17 °C. With fine ageing potential, it can be kept in the cellar and enjoyed until around 2031.

The estate

Founded in 1831 by Bernard Bichot, the Albert Bichot House is an emblematic figure of Burgundy. Based in Beaune, this family-owned estate is now led by Albéric Bichot, representing the sixth generation. The estate spans more than 100 hectares of vines, the vast majority of which are certified organic, spread across six exceptional properties. Recognised as the first historic buyer of the famous Hospices de Beaune, this prestigious brand stands out for its environmental commitment and its dedication to enhancing each Burgundian terroir with a rigorous plot-by-plot approach.

The vineyard

This cuvée comes from the lower section of the Clos des Maréchaudes, an exceptional two-hectare monopoly with the rare distinction of bringing together a Grand Cru and a Premier Cru within the same enclosure. The Aloxe-Corton plot covers 1.40 hectare. The vines, aged between 35 and 40 years old, thrive on brown limestone soils resting on scree, offering slightly deeper and less clayey land than the upper section. Facing east-southeast, this terroir, historically improved through drainage work, benefits from optimal sunshine, encouraging early grape ripening.

Vinification and ageing

To craft the Aloxe-Corton 1er Cru "Clos des Maréchaudes" Domaine du Pavillon 2024, the grapes are hand-harvested and carefully sorted upon arrival at the winery. Fermentative maceration takes place in temperature-controlled wooden vats over a period of 18 to 21 days. The wine is then aged in oak barrels for 14 to 16 months, using a proportion of 25 to 35% new barrels.
